Just like a squeaky wheel on a car, for those of you who have been asking for this forever, here's your oil. And your fats while you're at it.
Fats & Oils are one of the most overlooked food groups out there and undeniably one of the most controversial.
And it's not hard to see why. It's a complex topic with a lot of conflicting science that we have to use in our everyday cooking.
However, when people actually study the fats instead of just chewing it, we do find some pretty compelling evidence on which ones we should be using regularly, occasionally and never. Let's discuss.
What I Would Change:
Not necessarily a change, but in regards to many vegetable oils, especially seed oils, we do see a very similar situation as with our Grain Tier List. The fact that human involvement can be the real enemy.
If I were to change anything in hindsight, it would be to move Canola, Safflower and Sunflower Oils down to the C Tier, while acknowledging their potentially healthier, monounsaturated, often cold pressed versions, but letting the actual visual itself serve as a warning for the potentially more harmful ones.

Thanks for your amazing videos. However one oil you forgot is Hemp seed oil. It’s my favourite and was always told it had amazing ratio of omega 3 to omega 6

Respectfully, many will recognize these ingredients and assume you were referring to processed oils, especially as you used the processed counterpart as an image for the list. Also there's a lot of misleading information out there and no one really knows for sure what fats are healthy, especially as it probably depends on various factors such as genes. One thing that's healthy for me could be detrimental for your health. Sadly no one knows for sure. Regardless, I appreciate the video and the open discussion on such a controversial subject.

This video was incredibly informative and useful. But "best and typically most natural state" can be ambiguous. For example, I'm guessing canola oil was presented in its refined state (I've never heard of cold-pressed canola and the numbers seem to match up), but this wasn't explicitly mentioned. Specifying virgin vs refined would've been perfect.

It’s important to mention how some oils, such as canola, palm , and safflower are usually highly processed, and it becomes a trans fat after hydrogenation.

It's quite incredible how Margarine managed to propagandise itself as the healthier option to lard and butter. The last time I mentioned to someone that Butter is far healthier than Margarine I was looked at if I was crazy.

50 years of bad science and paid studies really did a lot of damage to us, our health and brainwashed everyone to avoid the good and healthy animal fats and go for the cheap and unhealthy highly processed and heated vegentable oils.

If you put margarine in the corner of your garage open, not even bugs will eat it. Crisco, too. A couple of years later, forgot everything during the big C event, I just found a Crisco in my greenhouse. ( experimenting with heaters) No bugs found.

​@@arcticsnow7505 The processing and refining tend to involve high heat and pressure which destroys a lot of good nutrients and creates toxic byproducts. It doesn't help the fact that many oil manufacturers uses a cocktail of suspicious chemicals used to purify the oil.

Lard is fine, but note that eating a diet high in saturated fat is not going to be optimal for cardiovascular health compared to otherwise. That doesn't mean lard is BAD, as long as you reduce saturated fat from other sources it's perfectly fine

You're providing such an important service to myself and every other undereducated American. There's no doubt that I'm healthier from having watched your videos and the way I think about food in general has changed a ton. To me, one big barrier to eating better is figuring out what the hell is actually better. As well as having variety in what I eat without sacrificing nutrition. Between the grain, and meat videos alone I'm eating very, very well in every sense of the word

keep in mind that there was a research looking into avocado oils, and most of them did not contain 100% avocado oil, but it was mixed with other oils.

Similarly, with olive oil, many are blends of leftover processing of different olive oils from different countries. There are certifications in olive oil, that you can look for. I wonder if there is a way to certify how seed oils are processed. Great video talon.

I love this one. Yes, oils and fats are so controversial. And as you said, justifying your own choices is the best we can do. I’m a big believer in fats as part of a healthy diet and will personally never be leaving them out. I was happy to see all my favorite oils in B tier or above based on your ratings, and processed oils I already avoid like shortening and margarine in the F tier. And I learned that I aught to give hazelnut oil a try too!

Fats are essential like DHA and EPA and DPA and also your Heart is working on monounsaturated fats, but oils and isolated fats are not a health food, firstly they decrease blood and oxygen containt in it, and also they can oxidize and change really easy in Oxidants like AGE‘s and trans fats, because there is no fiber separating from the air besides them and oxygen is an extrem strong oxidizer, not to forget that heat catalyse this process enorm. Unroasted nuts contain 5000 AGEs per 100g roasted nuts 9000 while olive oils contains 11000 AGE‘s per 100g and Sesam oil and Butter contain more then 20.000 AGE‘s per 100g. The only options for fats are unprocessed nuts and of course low in saturated fats because they are cell toxic and block the sugar metabolism and increases your risk of CVD. Walnuts in combination with Haselnuts are the best choice.

These lists are geared for an American audience, and most Americans find the concept of eating organs disgusting. We tend to associate it with horror/zombies, not even kidding. Liver is only commonly eaten organ here, liver and onions most commonly, and it's considered a bottom tier protein. Truthfully there is nothing wrong with eating organs if they are prepared correctly.

You should do a tier list about different kinds of pickles and ferments, and maybe compare some of them how they stack against their fresh equivalents. I've heard a lot of good things about them, but I'm curious how good they are exactly.

Something interesting/unfortunate about palm oil is that it actually naturally contains a much higher vitamin content when first harvested, but the vitamins cause the oil to be colored orange so they're removed and bleached from the oil before selling it in order to fit usual consumer expectations. If most consumers preferred the healthier, less processed version of palm oil, the producers could actually just skip that processing step to make what I would consider a superior product.

I'm very thankful for this tier list as someone mostly on keto. I had to make the hard decision to eat "normally" and at maintenance during weekends to manage cravings and prevent binge eating during the week 😢. It always feels like I'm getting a Bad Grade in ED/weightloss dieting even though it keeps me on track for more days at at time. So knowing the best fats to be eating during the week is very nice.

@@scrapzz2696 I would love to use avocado oil because it's so common in keto recipes, unfortunately my housemate is allergic and I am developing an allery to it. Its still mild and I dont always react so I can still eat avocados sometimes but I know one day it'll be anaphylactic too.

I couldn't agree more when you said that fat are necessary. I used to be skinny my entire life training way to much and eating very little, and when I finally took some weight I felt SO MUCH better. Like incredibly better. A bit of fat is essential for the well being, at least it was for me.

Growing up in north America, there is always this stigma against eating fats because of the obesity crisis, nobody ever talked about being too low on fat and how unhealthy it is to be underweight.

Also used to be underweight and after putting on some weight until my BMI was perfect felt like superman. Even noticed basic functions like hunger and thirst actually existing. Skelly mode isn't great and neither is being fat.

Definitely happy about my choice of oils after watching this. I keep 3 options in my pantry - ghee for meat (as I love the flavor), sesame oil for occasional flavoring and extra virgin olive oil for literally everything else. I never deep fry anymore, but I used to use sunflower oil for that as it's the cheapest oil where I live. Great vid.

I like ghee/butter or lard/tallow for meats. Avocado oil for veggies because it's neutral. Olive oil for dressings and sesame oil for certain dishes because of it's flavor. Glad I'm not doing too bad.

These tier lists are great. I have been waiting for this one as fats are very confusing. Saturated vs unsaturated, mono vs poly. Then trans vs cis. Then with pufa ratios and then with 4hne and deodorization processes. It's such a mine field I am still a bit confused but this list surely helps.

An easy heuristic is not to go crazy on fat content, use minimally processed plant-based oils and fish oils, moderate your intake of animal fat and avoid the trans fats like the pleague. Unless you're trying to heavily optimize for some condition or fitness goal, this should do. Wild caught salmon and sardines for that omega 3s, extra virgin olive oil is a fairly safe dressing and cooking choice (avoid deep frying in general), animal fat is a mixed bag depending on your sources but some pasture raised chicken (eggs included) and the ocassional grass fed beef should be fine. Pork is okay too again depending on your sources, the healthier the animal was fed and lived the better for you. Butter/ghee is a good favoring tool in small amounts, I like to add a small knob of butter in my olive oil to add flavor. Nut butters are good for snacks in smaller amounts, make sure they are well made and not processed sugar bombs. I don't use seed oils much other than sunflower seed, but I find sunflower oil is a totally ok option in cooking and dressings in moderation. Best to not overthink it and not overdo it.

Great video, but why was level of refinement not considered more? Aren’t soybean and canola oil usually only available in highly refined forms? I feel like this makes them much worse than what the tiers reflect. Also, I’m curious what you think about research on cooking stability, which shows evoo to be the most stable even though it has a low smoke point.

I feel like this point is incredibly simple. Kinda like in the drink one, if it is super sugary alot of my points are moot. In this one, take the healthiest oils and refine them, and alot of the points are moot. But I feel like anyone who actually cares about their health will be able to put that together. So what was I supposed to do? Say after every oil that refinement matters and then not be able to actually tell people how to find evidence of refinement because it is incredibly inconsistent from place to place? I already conceded that I wasn't going to be able to solve everything with this one. A lot of it comes down to the individual making the judgement call, based on what I found. As it always has been.

@@Talon_Fitness regardless, you did a great job. It’s unfortunate that refinement has the potential to be very detrimental to health but is so hard to research. The importance of smoke point also seems to be hard to nail down in my experience. Thanks for the reply.

​@@Talon_Fitness 4 hour long tier list that splits every oil in to different categories of refinement and ranks them B) Like for people asking its basically a guarantee that if your premises processed food has oil's in it, they're gonna be the bottom of the barrel oils, but buying a bottle of extra virgin olive oil is probably all gucci.

@@Talon_Fitness No, all seed oils are processed way beyond what animal fat is processed at. It is impossible to find seed oil that isn't deodaraized and industrially processed. Even cold pressed seed oils are terrible for your health anyway - I HATE SEED OILS

Another tier list that I would like to see is Protein Quality and Bioavailability foods/supplements. Eggs, egg whites, casein, whey, beef, chicken, etc looking specifically at the protein quality.

He tends to give different perspectives on foods that I haven't considered before. Plus, it gives him another video idea (which he asked for). So, it's literally Win-Win for everybody...except for maybe you, I guess. 🤷‍♂

@bowengass4215 There's nothing else to say though. The quality and amino-acid profile of different sources of protein is already quantified in a single easily digestible number. What would he even say in the video? You can get the same information in a 10-second search.

I appreciate the video and agree with your ranking. My caution to anyone who is purchasing a new oil as a result of this video is that oils are some of the most intentionally adulterated substances available on the market so be careful when making your purchases. Often a more expensive oil will be cut with a less expensive (and less healthy) oil to make a higher degree of profit, and unfortunately short of a lab analysis it is almost impossible to tell adulterated oil from not. Personally we cook with Avocado oil and Ghee, and use Olive oil in low-temperature applications. As time goes on I am skewing more towards Ghee as you can make it yourself from a known source and it has a Higher smoke point than a lot of other animal fats making it ideal for cooking. I avoid Seed oils in general because of adulteration, inflammation issues, and some of the ethical issues in sourcing them.

I so enjoy these tier lists, I also really enjoy the breakdown between different items. I wasn't even aware some of these oils existed as cooking oils, so it was very interesting to learn. I'm also glad that my go-to frying fat is at least not at the bottom of the list! (although it probably matters little in fried foods as long as the smoke point is high enough)

@@ttkok11 pre workout also is useful, has caffeine and gives you a good pump, don't forget electrolyte supplements which are also useful if you do a bunch of cardio or play sports

@@seradjlarfi6905 electrolytes are fine but just some salt will do the trick. What i don't like about preworkout is the added sugars, overdosed caffeine and other substances that don't even work so you are better off with just cafeïne and electrolytes.

the fats and oils I use for cooking are extra virgin olive oil, butter and ghee butter, I think this is good given their places on the tier list. the rest of my diet is pretty well rounded so I'm sure I'm getting other fats in other foods, please send a message in all caps if I'm doing something wrong :)

Excellent Choice of fats. Though bird fats are heavily underrated. The regions of France that almost use entirely duck or olive oil are also the regions that have the highest life span (in Europe aswell)

The nuances of healthy fats, trans fats, and the divisive seed oil discussions I've seen have left me a bit overwhelmed on this subject. I'm so happy you've made a video discussing the benefits as well as the risks associated with each of these fat sources. I plan on diversifying, but prior to seeing this video I was getting my fats from mainly butter and olive oil, and using avocado oil when cooking due to its high smoke point.

Hey Talon. What is your opinion on Dr. Sten Ekberg and his health videos concerning butter being one of the best that you should consume? He rated oils such as flaxseed, soybean, canola and safflower to be pretty bad and other such as butter, coconut, and ghee to be absolute top tier while they didn't quite make it to the top of your list? I actually saw this one during the process. And if you actually listen to the video. There's very little contradiction. A bit part of what hes discussing is actually cooking with these oils. Talking about which ones are negatively impacted at different temperatures typically oxidizing. Which ones have already been negatively impacted to get to a higher smoke point. And which ones are generally recommended for actual cooking. Which I briefly touched on all of this, but the reality of it is my video has very different criteria. I mentioned the smoke points and how refinement typically leads to oils being able to sustain more heat, but this is because they've already been tampered with. And I want to point out Flaxseed oil in particular which I specifically said shouldn't be cooked with. Which is exactly the one he said. The science of how cooking affects these oils seems to vary from source to source, but for the most part I do think he's on the right page as it pertains to COOKING with said oils. But I honestly don't remember everything because he talks really slow 😂

It’s important to mention how some oils such as soybean oil, can have harmful residue from the pesticides sprayed on them. Staying on during the duration they’re harvested.
