I was preparing both gluten free and the conventional ones. I mixed varieties of flax, cashew, Brazilian walnuts and so on to make the Enjera. My customers were mostly non-Ethiopians. We Africans are diverse in traditional foods. Let us be united and be business people.

Of course. I do make injera without all this ingredients. It’s always turns good for me. If I try this I am not going to add soda or vantages water or baking soda. But I will add pumpkin seeds, pecans, and walnuts.

Thank you for sharing. Your injera recipe is the healthiest recipe so far. I tried your recipe and I loved the smell of the injera. I normally add አብሽ when I make injera and I like the smell and taste of the injera. When I followed your recipe I didn’t have Pumpkin seed on hand, so I substitute it with Sunflower seeds. But I still want to try it with the Pumpkin seed. Is the pumpkin seed you used roasted or raw?

Baking soda and soda water( ambo weha)are basically same thing, they are not bad chemicals . It’s actually good for indigestion or heartburn, Enjera can be very acidic so baking soda will help to rise the batter and digestion

Anyways, how do you store the Enjera after preparation and what’s the shelf life before the next batch? Do you put it inside the fridge? If so, when? I don’t know why most RU-vidrs forget to talk about this 🤔
