Ingredients for 6-8pax:
• 1.2kg Whole Chicken Legs (cut into desired size).
• 25 pcs Dried Chili or Fresh Red Chili.
• 20 Thai Shallots.
• 6 Candle Nuts.
• 70ml Cooking Oil.
• 2-3 tbsp Tamarind Paste.
• 300-400ml Water.
• 1 ½ - 2 tbsp. Salt.
• 2 tbsp. Sugar.
• 1 ½ teasp Chicken Stock.
Methods:
• Blend Chili, Thai Shallots & Candle Nuts till fine.
• Heat up oil in wok, fry chicken meat for about 1 ½ mins till just lightly golden color & put aside.
• Remove some oil.
• Stir fry chili pastes constantly till out appeared on surrounding surfaces & become aromatic.
• Add in chicken meat gently stir fry for a few times till meat are covered with chili paste.
• Add tamarind water to cover the meat.
• Add salt, sugar & chicken stock to your desired taste.
• Leave to simmer & continue to gently turning the meat occasionally so it will be evenly cooked.
• Once the gravy turn thicker & meat becomes tender, turn off the fire, remove and ready to be served.
