• 150ml Cooking Oil
• 700ml Coconut Milk
• 300-400ml Water
• 500gm Prawns
• ½ one quarter ripe medium size Pineapple
• 1 ½ tbsp. Salt
• ½ tsp Chicken Stock
• ½ tsp Sugar
• 4 kaffir Lime leaves
Chili Paste Ingredients:-
• 20 dried Chilies (boil & remove seeds)
• 20 Shallots
• 4 Candle Nuts
• 1” thumb size fresh Turmeric
• 1” fresh Galangal
• 4 stalks Lemon Grass
• 2”x1” Shrimp Paste
Methods:
• Blend the Chili Paste Ingredients finely.
• Heat up oil in wok, add in blended chili paste, stir off & on till oil appear & it’s aromatic.
• Add in water, stir till its boiling, add coconut milk, slightly lower the heat, keep on stirring till gravy is boiling, add in all the seasoning & kaffir lime leaves.
• Then add in the sliced pineapple & continue stirring for about 3 minutes, when its boiling, add in the prawns, cook for about 2 mins till prawns are cooked.
• Off the fire, the dish is ready to be serve.
