Basic Recipe:
2 lbs ground beef (80/20)
2 Cups no salt added Chicken Stock
2 Cups Tomato Puree
1 Cup (110 g) Oakridge BBQ Texas Red Chili mix
1/4 Cup Extra Virgin Olive Oil
2 tsp Kosher salt

How did I miss you all having a RU-vid channel! Great content, and thanks for sending the Notes along with the chili seasoning. Oak ridge is the only brand of seasonings I use for my BBQ after trying MANY. Top quality.

Great video Mike, can’t wait to try the chili mix. We usually brown the burger and drain the fat and juice. I would think maybe I could add a little extra chicken stock to make up the moisture content?

Yes, absolutely. However, the fat does really add to the mouthfeel and savoryness of the chili, so I would at least add back some good fat like EVOO after you drain the burger.

I have never made chili without an onion. I may try this recipe though.

I know, I'm the exact same way. That's why onion is in the mix! 😁 But, as I mentioned in the video, you can always add fresh diced onion, green peppers, chilies, beans, etc... You don't have to follow my recipe to the letter, or even at all! 😎👍👍

Looks delicious Mike! I'd bet it would be even better "over the top" style on the smoker. Are you planning to release it to retailers after your labels are ready? I carry your products in my store at Dominion Grills and customers love everything you've got. Thanks!

What you said about not using fat to bloom spices @4:00 is 100% false. Chef Gordon Ramsay says that sizzling spices in hot fat until they're ultra fragrant is the *_best_* way to bloom spices.

@@OakridgeBBQI was just trying to help you out. Blooming spices or herbs in fat before the liquid goes into the pot can extract far more flavor than by simply simmering these ingredients in water.
