Chef, these are incredible! Everyone loved them. I'm not sure why this video isn't getting many views, but it should be in everyone's favorites. You haven't posted a bad recipe yet, and the delivery is simple and easy to follow. Top tier cooking channel, please keep up the great work!

Great stuff--I'd expect no less. I remember picking up a copy of Authentic Mexican back in the 90s--easily one of my best cookbook purchases ever, and was blown away by his knowledge, skill and the great recipes therein. Decades later I'll still have people say "Do you remember those tacos you made that one time?" Haha, I do--they were excellent. Thanks Rick!

Yum. I need to remember not to watch your videos while hungry. I've done similar with pork shoulder steaks and canned Las Palmas Chile Colorado or red enchilada sauce. The Chili Colorado needs to be doctored up a bit to taste. Commonly called 'Carne Adovada' here in Arizona. Keep up the great work Rick, your videos are a treasure to a lot of us.

Hi, Rick. This past weekend was one of the last days' temps will be in the 50s, and I took the opportunity to make the braised beef ribs recipe from your appearance on Julia's show! Absolutely fabulous favorite of mine, and I used the leftovers in baked beans with lots of garlic. I'm still one of your fans and often adapt your recipes to my dietary needs. ❤

How would canned adobo sauce affect this if used instead of crushed peppers? I'd add rest of the spices in smaller quantities to keep the ratios somewhat the same.

Yeah, that's a pork loin. You could use tenderloin but would have to be careful not to overcook it.

​@@rickradcliffe However, I think cuts of meat have different names depending on what part of country you're in, or even supermarket you shop. Maybe that's what a pork loin is called where Rick is (Chicago?).

Hm? … Seems like there should have been something else added to your tacos? Additives like mashed beans with carmelized onions and charred red-peppers or a coleslaw with jalapeño slices.
