OLD SCHOOL TURKEY BRINE
brining a turkey is so important to achieving a moist juicy flavorful turkey!!
A good brine needs salt ,acidity ,herb flavor and a little sweetness!!
This recipe is simple and when u soak your turkey in it for 24 hours
You will have that nice juicy moist and flavorful turkey that u will be proud of
This recipe is for a 10-20# turkey
RECIPE:
1 gallon water
3 oranges cut in wedges
2 bay leaves
1 sprig fresh rosemary
1 sprig fresh thyme
1/2 cup kosher salt
2 tablespoons whole black peppercorns
Add all ingredients in large stock pot and bring to boil
After coming to boil
Remove from heat and let cool
Add to turkey and let sit 24 hours

I even brine my chicken before I cook it. I find it also takes out any impurities and the meat is cleaner as well as juicy.

Good afternoon Chef. I have not brined a turkey yet.My son is doing the turkey and my daughter is doing everything else. I would have to get the ingredients so that he can do it. I have not done it. I have always cleaned mine really good. Hello Chef. I've never brined or bought a turkey before. I only buy the turkey breast. Does the turkey have a hint of orange or thyme after the brine and roasting of it? What's the purpose of the peppercorns in the brine? 😊

Thanks for showing your expertise for cooking my mother used 🦃 a orange 🍊 🍎 apple and onion and celery in the cavity of the 🦃 turkey and my grandmother used butter for crispy skin and she used 🍊 orange grapefruit and celery onion and garlic buttons and salt 🧂 and pepper my mother used garlic powder and seasonings salt 🧂.

I've been doing the same as your mom for years, except I use a lemon vs. the orange. I make seasoned butter and put under was much of the skin that will lift. I baste while roasting as well. It's turned out great each time.

Good recipe, I usually add apple, lemon, cinnamon sticks and cloves as well to your recipe. Cloves give the turkey that great fall/christmasy flavor. Also try to keep the turkey under 15 pounds, the large turkeys tend to dry out during cooking. Brining is the ONLY way to cook turkey, trust this man. Another trick is to use those orange standing coolers used at work sites, that way you don't have to make space in your refrigerator, can just leave it full of ice on your kitchen floor.
