Olive Tapenade Recipe: Ingredients: -3/4 cup Kalamata olives, pitted & drained -3/4 cup Pimiento-stuffed Green olives, drained -1 1/2 cups Giardiniera Salad (jarred Italian-style pickled veggies), drained, pepper seeds and stems removed -3/4 cup Parsley leaves, rinsed and dried -2 whole Anchovy Fillets (in oil), finely chopped (you can add a TBSP of the oil from anchovy can, if you like) -3 scant TBSP brined Capers, drained -2 small cloves Garlic, minced finely -1/2 of a roasted red bell pepper, drained well and finely diced. -2 Tsp dried Italian seasoning herbs (you can substitute with fresh herbs to taste) -2 TBSP Red Wine Vinegar -2 TBSP Extra Virgin Olive Oil Instructions: Combine the first 6 ingredients in a food processor. Give it 5-6 2-second pulses until roughly chopped (you can adjust this to your preference). Transfer mix to a large mixing bowl. Mix diced roasted pepper, minced garlic, Italian seasoning, vinegar, and olive oil in a small bowl and add into your processed tapenade mix. Stir well. You can add some ground black pepper (optional). Serve on sandwiches (especially Muffulettas), burgers, as a topping for all kinds of main dishes, or serve with crackers/bread/chips as a condiment or relish. Tip: If you don’t like anchovies, you can replace with 2 TBSP of fish sauce, or skip altogether. Enjoy!

I love this! Mine is almost the same, but I also add black olives and cocktail onions. I haven't used anchovies before so will be adding to my next batch 😁 Thank you!

It seems a great Mediterrane mixture, I like to try it. Maybe, I consume as a salad instead of Tapenade. Also, instead of anchovy add tuna and red wine is a better choice instead of the vinegar Anyway; dear Ben, appreciate for introducing a new guest to our table, Tapenade

Hi chef Bagheri. I have seen other recipes for tapenade but this was unique since you used dried Italian herbs and seasonings and pickled vegetables. Your suggested recipe looks good and I will try it for sure. I can suggest putting it on grilled swordfish or other types of fish that can stand this topping or even roasted or grilled chicken. By adding a little more extra olive oil it can make an excellent topping for suitable fish. Thanks for the recipe

Curious how long the left-over amount keeps in the fridge with anchovies in it. Would 2-3 days be alright?

Steve, since there is no meat, butter or cheese in this dish, I would say it should be safe up to 10 days or 2 weeks (if it lasts that long!)

Just made this and followed instructions to the letter. Have to admit it’s a little strong for my taste. Anything I can add to tone it down just a little. Otherwise, beautiful.

The answer depends on what you mean by “strong”? Was it too acidic? reduce the amiunt of vinegar. Too much anchovies? reduce or eliminate the anchovies, etc. Experiment and tweak it. Make it your own!

Yes, too acidic for me personally. I will use less vinegar next time. Thank you. I read that Martha Stewart adds currants and chopped walnuts to hers and then layers it on top of goat cheese. What would you think of that??

Too much stuff in the mix. Only olives and olive oil. NO PICKLED VEGETABLES. Do not need herbs and spices. Good olives and good olive oil, don't mess up a good thing with unneeded extras.
