The answer is that I make new things every week (and mess up about 50% of the time!). Or I don’t mess up and my family still doesn’t like it. 😅 It’s always frustrating at the time but then it leads to a better version, plus tips i can share about how to avoid pitfalls. So it’s all part of the process. My advice would just to always have some frozen French fries and chicken tenders in the freezer as backup lol. I love 'em both, Marie. The coffee cake is just the right size and so easy to make. Now...for the reinforced muffin pan...it is the greatest.💯 I've never bought the silicone muffin cup molds because I always felt they were too flimsy. The reinforced edge mold would be the only way I would try this recipe. (Christmas gift, definitely🎄) The egg bites look fantastic. I really like that I can adjust the recipe size. When you say, heavy cream, is that heavy whipping cream? I am SO impressed by both of these quick and easy recipes. I'm going to make the egg bites tomorrow but in my metal muffin pan. Hi Leslie! You can mix up the topping with your fingers or a pastry cutter in a bowl. I should have demonstrated the hand method along with the food processor, sorry about that. You could also use electric beaters (gently) to mix up the topping. Just a few pulses at a time. I don’t think the blender will work because the blade moves so quickly - I’m worried it will turn to paste instead of crumbles. Hope that helps ❤️, Marie

Hi Patricia! I’ve seen that happen before! There are a few things that could cause that: (1) oven not preheated when the coffee cake went it; (2) oven is mis-calibrated so the oven is actually cooler than the temperature reading; (3) the topping was over-mixed; or (4) the butter was too warm. Basically, if the butter goes into the oven and melts for any of those reasons, the topping won’t crisp up properly. Let me know if any of those could be the issue with yours, and if those don’t fit, I’m happy to troubleshoot with you a little more! Let me know. ❤️, Marie
Both look YUMMY!!!...question...do you have a suggestion on what gadget I could use to make the coffee cake topping, as I do not have a food processor or any gadget close to making a fine topping like this in my kitchen 😔, also I'm sure the heavy whipping cream really makes the egg cups yummy, if I were making last min would you suggest I use milk or just omit?? You can make the topping by hand or in the blender, I have not tried using milk or omit but you probably could, the paper liners might work but it might be hard to separate the egg from the liner. Thanks for watching

Morton’s makes various kinds of salt - Iodized, Kosher, Lite Salt, Ice Cream Salt etc. I should be more clear when I’m saying kosher - as what I mean by that is coarse kosher salt, meaning the salt is in bigger grains. If you are using a fine grained salt (like Morton’s iodized table salt, or a fine grained pink salt), then you would need to use a bit less than my measurement. The reason is that less of the coarse salt can fit in a teaspoon than the fine grained salt. It won’t make too much of a difference, but you might find things a little salty if you use a fine grained salt in a recipe that calls for kosher salt, which has a coarser grain. Hope that helps! This November it is my turn one Sunday to bring snacks before Sunday School. I plan on making your coffee cake and Baked egg cups. My plan is to make a "square" coffee cake rather than the round one, as it is easier to slice evenly for a large group . What square pan is comparable to a 9 inch round pan, and do I need to alter the recipe amounts at all?
You probably already have an answer to your question but an 8 inch square pan has the same volume as a 9 inch round pan. No changes to recipe. Bake time is the same.
I just put the cake in the oven and do have one concern . My batter is much more liquidy than yours it poured into the pan like regular cake batter , i didn't have to spread it like you did . I did everything exactly the way you did . Why would this happened ?

Sometimes when I measure on camera I’m not that accurate and I recall on this one feeling I was a little short of milk and oil because I couldn’t figure out where the line was on the glass measuring cup. So that would explain why mine was thicker. Fortunately most of my recipes can take a little error either way 😅 I’m confident you did everything right 🥰 Let me know how it turns out! ❤️, Marie
Ok not only did the topping melt and the cake is still raw after 30 minutes and using ice cold butter and baking in a perfectly calibrated oven . Absolutely not over pulsing the topping or over mixing the batter . It's safe to say this recipe was a waste of my money and time .
