i know this is an old video.... I tend to re-watch them especially when I am cooking....even if I am cooking an entirely different meal LOL This one I have done several times and a family favorite! I love a bite of the 'whole lemon' with the chicken and date - yum!

A little tip: if you have leftovers and you used the whole lemon, take it off, because it does get a lot more bitter in the fridge :)

Love that she doesn’t care that she’s wearing rings while cooking or any form of jewelry for that matter I see quite a few women chefs wearing beautiful jewelry only to take it off when going to cook. Or maybe I’ve just been watching the wrong chefs. 😂

People are told to remove jewelry, especially small ones before entering a professional kitchen so that the customer does not joke and die in case the jewelry or a part of it, falls into the food during cooking

She is not working in a commercial kitchen or she would be told to take the jewelry off, besides customers maybe getting something, the metal gets hot when near the range. Also, a big no-no hair hanging down. It must be tied back and wear a cap. So many videos have females "cooks" with long beautiful hair hanging down. And they touch their hair a lot. They may cook well, but they are not pros.

Marjoram and oregano are the same thing. Origano Marjorama is part of the family of origano. It has a more delicate scent as it is a annual plant whilst the simple origano is perpetual.

Nothing will survive in salt. This is nature’s preservative human have been using for thousands of years. Hence why most preserved food are extremely salty. Cured meats, cheese, etc.

Catherine Dwyer it sounds very slight. Might be the setup of the room they’re in. The audio over the speakers might sound best to reach throughout the whole room that way. Who knows. Either someone knows exactly what their doing with the audio or not at all this day. Who knows haha

I haven’t tried it myself I do agree with you. But I still might give her the benefit of the doubt because of the dates and shallots etc. I’m hoping it balances out. I suppose I will still try it and then adjust to my tastes later should I feel it’s not to mine or my family’s liking.

Once you caramelize it like that it lessens in bitterness very much. Like cooking orange peels!

Remove the seeds, that is what has most of the bitterness in it.

Have her books, love the recipes. Interesting to see her in person, but the up speak is so annoying. Makes her sound like she is asking a question all the time.

Perhaps she’s dehydrated or doesn’t drink nearly enough water. As humans we tend to crave either sweet or salty in our food when lacking water in our system. Or she just really likes salt lol. I’ll just salt to my taste when trying this which won’t be nearly as much🧂 lol.

At least 1 tsp per 1 lb of meat. Every good cook knows that. Otherwise your food is tasteless.
