Not surprised that Mimikyu is seen as way worse, same with Araquanid being seen as brutal. While yes, Ribombee gets a double omniboost, you just fought Ultra Necrozma, also bug/fairy is not a good defensive typing, with weaknesses to rock, fire, flying, poison and steel. Fairy and Bug also don't have good coverage with each other. Fire, poison and steel resist all its attacks and can just whittle away while flying and rock aren't weak to its STAB attacks. I know it doesn't learn a ground type move, but it desperately needed a ground type move, like dunno, hidden power instead of draining kiss. Mimikyu is way earlier in the game, its typing is brutal (poison and dark go away as weaknesses, only leaving ghost and steel) the omniboost matters more, and its ability really throws a wrench into plans, not to mention how the Lum Berry is just nasty vs. a random Occa Berry which only covers one out of 5 weaknesses. The coverage from fairy, ghost, bug and normal is also way broader, its ghost moves hitting both weaknesses at least neutral. Also, Ribombee's companions just seem super weak comparatively? Araquanid's battle being in rain and it being so early you might not have many different pokémon to counter it (weak to flying, rock, electric with an electric reducing berry and rock being super weak to water making flying the only really viable option).
As the previous episode, this video is very good and detailed! Congrats for the cool idea and for having reached once again your goals, even against Ultra Necrozma. Just a note though... In Ultra Sun and Ultra Moon the fossils are version-exclusive only in Konikoni City: they can all be aquired through in Poké Pelago, precisely after exploring Isle Aphun's "Path for Rare-Treasure Hunting!" (or "Path for Interesting-Item Hunting!", but the former is better, percentage-wise). In any case they're very rare, but with a bit of time every revived Pokémon will be available on a single save without trading.

I remember doing a Zekrom solo run for fun in these games, and thought I was gonna get stuck on UN because Z-Dragon Claw didnt kill on the first 2 attempts. Turns out, it was a range, but its crazy to think that even 150 base Attack will struggle to break it.

I'm just gonna say my piece - Gen 7 is my least favourite generation of Pokemon in the series. I haven't played Gens 8 or 9, but so far, I hate Gen 7 for its hand-holding, linearity, overuse of cutscenes, and that stupid Ultra Necrozma fight.
I always found ribombee very hard (I never use Z moves in alola because I hate it and it seems cheap to me) it kept spamming quiver dance, which made it able to sweep and also bulky asf
I haaaaate z-moves so I like to be creative with my strats. For totem ribombee, I had my walrein use encoure when it used quiver dance (risky, I know) and switched into torterra with heavy slam
