Onion kimchi
[ material ]
Onion 2.2kg, leek 90g, radish 200g, chives 150g
-Seasoning: Red pepper powder 100g, plum liquid 53g,
chopped garlic 2 spoons,
1 tbsp chopped ginger, anchovy sauce 24g, salted shrimp 1 spoon, salt 21g
-Pickling: 2.5L of water, 115g of salt, 60g of vinegar
-Flour soup: 17g flour, 175ml water
[ how to make ]
1. Peel 2.2kg onion
* Soaking onions in water makes the eyes less spicy
2. Wash the peeled onion in water twice
3. Cut the onion in half and cut it into bite-sized pieces
* Separate the onions by hand
4. Soak the onion in water mixed with 2.5L water, 115g salt, and 60g vinegar for 20 minutes.
5. Lightly wash pickled onions in water once
6. Add seasoning and paste soup and make kimchi seasoning
7. Add radish (200g radish) to kimchi seasoning and color it
8. Add onion and chives and mix
9. Add leek and mix together
* Add red pepper powder according to color
10. Finish with sesame seeds
11. After aging at room temperature for 1 day, keep refrigerated to eat.
