This is an interview with Chef Samuel Lee, Executive Chef of Shang Palace at the Shangri-La Paris. Shang Palace is the only Chinese restaurant in France to hold a Michelin star and is considered one of the best Cantonese restaurants in Paris and the world.
Raised in Hong Kong, Chef Lee brings authentic Chinese flavors and cooking styles to Paris as he strives to provide an authentic Cantonese dining experience in Paris.
In March 2015, Chef Samuel Lee took over the kitchen as Executive Chef. Originally from Hong Kong, he joined Shangri-La Hotels and Resorts in Wenzhou, a city in the province of Zhejiang, in May 2013.
Samuel Lee discovered a love for cooking through his mother’s family. They introduced him to the subtleties of traditional Chinese cuisine, which is a subject he can happily talk about all day.
​Chef Lee brings his ambition to Europe’s first Shang Palace. Constructed to match the luxurious refinement of the dining room, where the decor and service seem to suspend time, the menu’s generosity embraces the Asian tradition of sharing dishes between guests. Chef Samuel Lee remains very proud of Chinese cuisine while absorbing new influences from Paris.

Great interview, Fred. Chef Lee is an interesting and impressive chef. I hope he enjoys visiting the US. I've only eaten in one Michelin Star restaurant (3 stars, actually)--Le Bernardin in NYC (Chef Eric Ripert, who was actually in the restaurant when my friend and I ate lunch there. I have a massive crush on him--lol.) His specialty is seafood but the menu has a variety of offerings. I miss Paris! Hope you're doing well.

Thank you! I've seen Chef Ripert on Anthony Bourdain's show before, hope to eat at his place someday! I miss Paris too, posting a video from my lunch at La Bauhinia shortly, the other restaurant at Shangri-La Paris.

@@FreddySherman Yes, Eric and Tony were best friends--I also happened to be in NYC when I heard the news of Tony's death--I thought he was in NYC but he and Eric were in the Alsace region of France filming a show when he died. The news really shook me--I really miss him.

@@6falconsue Me too. He inspired me to do this, I remember watching his episode on Peru / Machu Picchu and that inspired me to book my own solo trip in 2008, which eventually led to me being a travel writer and content creator.

Tony would be happy to know he had such a great influence on you, although he probably would have called you nuts to even pay attention to him--he was delightfully sarcastic and a bit sardonic. Kitchen Confidential definitely started my interest in what makes chefs tick.

I can tell the chef was from Hong Kong by his accent. Get out here to NYC Freddy, I'll take you to some real authentic joints in Chinatown. We actually have 4 of them in the 5 boroughs.

@@loudmouthnewyorker2803 No, not on this trip. Never really explored them. I've only been to Brooklyn once, I have a friend who lived there and we had lunch and walked around. Only been to Queens to drive to the airport.

The dim sum was amazing especially the pork. The bao sandwiches were also amazing everything was so delicious.
