My previous onsen tamago recipe was using potato starch. So here I wanted to make it more simple. Please note I keep the eggs in the fridge until before boiling. Give them a try!

Ingredients :
- 3 to 4 eggs
- some tsuyu (triple concentration) amzn.to/3z3ZHMO
- some green onion

I love how I don’t have to add extra water or put on a lid! Now to experiment on different sizes of eggs. Does it matter on thickness of the pot or metal it’s made of?

Thanks 😊 Here I use a very simple Tefal pot. You’re probably right, water may well cool down at different speed in different quality pots.

So far my experiments failed and I got soft boiled eggs. I guess the initial high temperature overcooked the eggs whites. My go to method is now to stick a thermometer in the water and keeping the temperature at 158F for 15-20 mins depending on the size of the eggs.

@@iSqu3aKs I found that adding 3/4 boiling water and 1/4 tap water and putting the lid on for however long you want (i usually do 20-30 mins) works perfectly.

Awesome video! Question, do you have to put a lid on the pan whilst you're letting the eggs cook in the water? Just thinking if the ambient room temperature is either hot/cold would this affect the cooking time?
