Overnight "Sourdough" Bread | Faux sourdough bread recipe to try!

INGREDIENTS
For the poolish:
- 1 cup bread flour
- 1 1/2 tsp instant dry yeast
- 1 cup warm water
For the bread:
- 3 1/2 cups bread flour
- 1/2 tsp instant dry yeast
- 3 tbsp wheat germ
- 1 cup water
- 1 1/2 tsp kosher salt
INSTRUCTIONS
For the poolish:
- In a bowl, combine the flour and instant yeast. Stir and add the warm water. Mix to combine and dissolve the yeast. Cover and allow the poolish to ferment for 8 hours.
For the bread:
- In the bowl of a stand mixer, combine the poolish, bread flour, instant yeast, wheat germ, and water. Mix on low until the dough is combined, 4-6 minutes. Add the salt. Mix on medium until the salt is incorporated, 2-3 minutes. The dough will be sticky and wet.
- Place the dough in a well-oiled bowl. Cover and allow to rise in a warm place for 1 1/2 hours. During the resting and rising, stretch and fold the dough three times. Think of the dough as a compass with four quadrants: north, east, south, and west. Starting with the north, grab the dough with oiled hands. Stretch it up towards the sky and fold it over the dough to the south. Repeat with each quadrant. After 1 1/2 hours, on the final stretch and fold, cover the dough and allow it to rise until it is doubled, 1-1 1/2 hours.
- Once doubled, punch and knead the dough into a ball. Prepare a proofing bowl with plenty of flour and place the smooth side of the dough ball down in the bowl. Flour the top and cover. Set the bread aside to rise for 1 hour.
- During the rise, preheat a Dutch oven in a 475°F oven. After an hour, remove the Dutch oven from the heat.
- Turn out the bread onto a piece of parchment paper. Make a 1/2-inch deep half-moon cut in the top of the bread and carefully use the parchment to set the bread into the hot Dutch oven. Add 4 ice cubes to the Dutch oven and cover with the lid.
- Return to the preheated 475°F oven and bake covered for 30 minutes. Remove the cover and bake until the crust is golden brown and the internal temperature of the bread reaches 205-210°F, 15-20 minutes. Remove the bread from the oven and set on a cooling rack to cool before slicing.

I always make ordinary bread but have tried sourdough so many times with no success. I'm going to give this a go. Nice clear instructions so maybe it will work this time. Fingers crossed.

Try combining whole grain with some bread flour if you want. You might not get as much rise because whole grain is heavier. It will still be delicious.

I have no idea what he uses but I use King Arthur bread flour. It has a higher protein than most flours you find in the grocery store. It makes excellent bread and rolls.

I’ve been wanting to try making sour dough but have been intimidated 😂 definitely am going to give this a try! I don’t have a stand mixer, would a hand mixer work?

This kind of bread doesn't necessarily require a stand mixer but I wouldn't try it with a hand mixer. Just combine with a wooden spoon and set it aside for the first rise. You will still have to do the stretch and fold steps for the first 1.5 hours. You will be fine!

I agree, don't use a hand mixer. The stand mixer has a dough hook that a hand mixer doesn't have. You can just use your hands and a wooden spoon. 😊

If you mean health benefits then the answer is no. It will have a faint sourdough taste that you would get from an extremely young starter.

Sorry, but this is NOT a "no-knead" bread. The dough hook did a lot of work and it's important to form the gluten. It's really not that "easy." Folks, good bread takes time. You will have to work the dough. It's okay to be messy. I always use a poolish to make bread. Most experienced bread makers do.

I think it is a great recipe even though it's not the traditional sour dough. It works for me even using the mixer to do the work. Sour dough is such a hit and miss and wasteful trying to learn the process with the discarding.

Gluten is strengthened in several ways. Kneading is just part of it. Stretch and fold is huge in this kind of bread as is the long slow rise. This dough can be brought together by vigorously stirring with a wooden spoon. That will start to develop the gluten. I use a poolish or a tang zhong depending on what I am doing. I do have a 20 year old starter so I have some experience.
