Pa's Favorite Chili & Cornbread Layered Casserole 

Asking for prayers for my family. My great-grandson (he had stage 4 neuroblastoma when he was one year old) has been taken by ambulance to the hospital last night and again this morning morning. This morning his father was also taken by ambulance to the hospital. My granddaughter is 5 months pregnant and she is also sick. As is my daughter and my granddaughter’s mother-in-law. They all have Influenza A. They have it really bad. Please pray for my family. 🙏🏻🙏🏻🙏🏻🙏🏻🙏🏻

Thank you everyone for your prayers. Physically everyone is getting better. It’s slow progress but definitely an improvement. One is suffering from mental anguish because of having to see my great-grandson so sick.

I have to get self rising cornbread mix & buttermilk. I only have cornmeal that I use for cornbread I never new they had mixes. I'm anxious to try it. I hope you had a wonderful Christmas.

As soon as I saw this, I knew I would try it. I grew up eating cornbread with chili, but my husband did not and doesn't like if I make it. I made this one night and OMG! It is so tasty and easy! My 18 year old son absolutely loved it and asked me to add this to my cooking repertoire. My husband even liked it, despite his opposition to cornbread with chili. Only person who didn't like it was my 13 year old daughter, who just doesn't like cornbread, period. I'll be making this again very soon! One of my new favorites! Thank you for sharing!

I can't wait to have a kitchen to cook in again. Since the housefire we had we were having to eat out and that's something we never did. I always cooked at home. We all ended up getting sick so I finally brought a crockpot to the hotel room where we're staying. It's the only way I can make homemade dishes right now but at least we aren't eating at restaurants. God bless you both. 🙏

I do this to stretch leftover chili. Served with a salad, my family loved it. Putting the chilis in the corn bread mixture is such a good idea. Definitely going to do that the next time I make it! I also serve it with sour cream and pico de gallo.

Thank you Miss Lori for sharing this recipe with us. I have a Cherokee friend, a real Cherokee and this is the method she shared for making “Indian Bean bread”. I have never thought to use chili place of home made beans, which are delicious of course, but the Chili sounds SO yummy.

I’ve noticed you always season your proteins with salt & pepper like I do, a very wise & talented chef (BAM) always said “always season your protein “, no sauce or flavored liquids can season a protein , just like always salting your pasta water.
