I present to you my recipe for Paella over a wood fire.
Ingredients:
Chicken (1kg). Marinated for a few hours.
Rice, 100gr/person, i.e. 1kg.
Vegetable and fish broth (allow 3 times the amount of rice, i.e. 3 liters here)
2 peppers
Mix of spices
Raw shrimps (2 or 3 per person depending on taste)
Squid
Mussels (6-8/person, according to taste)
Saffron (I previously put it in my broth).
Salt
The realization, step by step:
1) Add olive oil, then fry the prawns for 1 to 2 minutes. And withdraw.
2) Same with squid cut into small pieces
3) Add oil, then put the chicken in the middle of the pan. It is important to have enough flames to brown the chicken.
4) Add the peppers, cut into very small pieces. Mix them well with the chicken.
5) Pour the rice over the chicken, then the spices. Mix together for about 8 minutes. At this stage, the flames must not be too strong, so that the rice does not stick to the pan.
6) Add plenty of wood, then distribute the rice and chicken evenly throughout the pan. As if you were making a pizza :)!
7) Once the wood added in the previous step has caught fire, pour the broth, about 2.5L, evenly. Start the CHRONO for 17 minutes!
8) During the first 3 minutes, regularly stir the rice outward and inward.
9) Around 8-9 minutes, add the squid and stir one last time.
10) Around 13 minutes, remove the flames from the center of the pan. To avoid burning the rice in the center.
10) Around 13-14 minutes, add the prawns. After 1 minute, turn them over and place them in their final position.
11) Around 15-16 minutes, add the mussels.
12) T=17 minutes, remove all the flames from the pan. Leave only the embers.
13) T=18 minutes, remove the pan from the steel support and place it on a table. On a trivet or wooden chopsticks.
Note:
The quantity of broth to add can vary according to: the intensity of the fire or the diameter of the pan. The rice should cook for 17 minutes. During cooking, watch that there is no shortage of liquid (risk of it burning on the pan). But don't put too much broth either, because you don't want soup after 17 minutes!
