It's summer time and you have tomatoes and basil. Let's make something unexpected!
From Page to Plate: Crafting Cuisine from Literature. My 2 loves collide! Books & Cooks!
Read about this versatile dish in the book "Un clafoutis aux tomates cerises" by Véronique de Bure. It's basically a journal of a 90 year old woman who lives life how she wants to because she's earned it with old age. In her diary entries, she often talks about food, and it gives me ideas to go cook! I decided to bring this to my reality. I scoured the internet and behold! It's time to make this summer treat.
You will need:
eggs
milk
cornstarch
cherry or grape tomatoes
parmesan cheese
pine nuts (optional)
salt & pepper
butter for the ramekins
For garnish:
fresh basil or parsley
more cheese for the tops (optional)
I made this in 6 single serve ramekins, but I imagine it would cook up quite well in a regular size pie plate or cake pan.
