Thai Pandan custard or in Thai is called sangkaya สังขยาใบเตย This is one of the most popular Thai desserts. It makes from Pandan extract mixed with coconut milk to create a unique fragrant custard. This pandan custard is a common dipping sauce with bread but you can also enjoy this recipe with waffles. It's easy to make and a nice treat for everyone.

Ingredients
10-12 pandan leaves and 1 cup of water (blend)
200 ML Pandan leaves extract
400 g coconut milk
100 g granulated sugar
50 g corn starch
50 ML sweet, condensed milk
4-5 Tbsp evaporated milk
1/4 tsp salt
3 eggs
