Pandan Huat Kueh 斑兰发糕 | Chinese New Year Specials 新年年菜
Hey everyone, welcome back to g8stromania. It's Jan 1 and we would like to wish everyone a happy new year. Lunar New Year is coming up and we will be continuing our LNY dishes series for 2022. Today, we are introducing Pandan Huat Kueh, so that you can huat huat huat this 2022!
For this recipe, you will need the following ingredients:
250g self rising flour
80g caster sugar
150ml coconut milk
6g baking powder
1g salt
10 pieces of pandan leaves
160ml water
Steps:
1. Extract pandan juice
2. Sieve in the self rising flour, caster sugar, baking powder and salt into a mixing bowl.
3. Add in the pandan juice in steps and mix.
4. Add in the coconut milk and mix.
5. Transfer the mixture into the baking cups.
6. Steam 20 minutes and it's ready!
