Hello friends!
Continuing on with our series of pantry cooking here is a super simple, inexpensive and tasty casserole. I bought most of these ingredients at the Dollarama here in Canada so it's super cheap.
Recipe:
Preheat your oven to 350F.
Spray a large casserole dish with oil.
Layer in one package of potato gnocchi.
Drain a jar of roasted red peppers, chop and layer on top.
Drain & chop a jar of marinated artichoke hearts and layer on top.
Drain a can of black olives and sprinkle on top.
Into a can of undrained diced italian tomatoes, add 1 tsp italian seasoning and 1 tsp minced garlic. Stir and pour over top of the other ingredients in the casserole dish.
Add pepper and salt to taste.
Cover with foil or a lid and bake for 30 minutes.
Before serving, sprinkle 1/4 cup of vegan parmesan cheese.
Feel free to make whatever substitutions you want. For example sun-dried tomatoes or green peppers, etc.
