i love your prep.i like to prep my hake also but i learnt a thing from you.also ive never seen a hake head, cos here in south africa we get hake without heads on

Hello Sue, the best way to descale a fish is to submerge it in water. Remove the scales with a descaler or back end of a knife or spoon edge. The scales won't be all over the place, the water will trap them.
@christiangomez5 Hi, Its just habit that makes me trim it up. There's no real issue leaving bruising on, but as I'm a fishmonger, I try to make it look as good as possible, so customers want to buy it. Small blemishes tend to put people off as they don't really understand what they are, so I'd automatically remove them to make the product look perfect
