SPAGHETTI WITH SQUIDS AND BROCCOLETTI (or TURNIP) #recipe #easy and #fast by Chef Max Mariola
This pasta could be a great alternative to the usual pasta with clams or scampi. If you happen to find very fresh squid at the market, get them! They are excellent !! First I will show you how broccoli or turnip greens are cleaned at home. I remove the hardest fibers. A € 3 paring knife could be very useful. I put the broccoli to blanch without a lid to keep the nice vivid green color. Then I'll show you how to clean squid at home using kitchen scissors. I brown the garlic, I put the squid to cook quickly. A grating of fresh chilli that I always keep in the freezer. I blend with white wine. Spaghetti di Gragnano IGP cooked al dente. I add the cooked broccoli. Stir well and the dish is ready! At the last I add a grating of pecorino romano! Try it before you say it doesn't fit us :-)

Very fresh small squid - 200 g
Broccoli or turnip tops
Garlic - 2 cloves
Chili pepper
Pecorino romani - just a scratch if you like
