I just made this last week, but didn't have bacon or pancetta. I'll have to make it again with the bacon or pancetta which will give it a much better flavor. Yum!!

You have opened my eyes to so many things I would have never even thought about doing. For this recipe, like the alla gricia, it's the fact that I never would have imagined a past dish that didn't include tomatoes or a cream sauce. But the pancetta and pancetta fat, rendered in the pasta water, make for such an amazing sauce. Easily one of my favorite S&P recipes. Thanks!
Oh boy another pasta recipe. And I say YAAAAYYYYYY!!!!!!!! I never thought to add onion. Delish. And I bought some frozen chopped onion recently and think it is great. For a quick meal and no mess. This is a perfect quick pasta dish. You da best man. Appreciation from Boca Raton - I live walking distance to Doris' Italian Market.... I want to try with real pancetta. Also Doris has the best pastas.
You recommended using medium shells for the pasta in this dish, but I can never seem to find DeCecco shells (or if I do, they're the larger ones). Can you recommend a good brand of medium pasta shells? (I've been using Ronzoni medium shells for years, but wanted to ask if you know of a better brand.)

My mother makes this. I disagree with you. Bacon and Pancetta are not the same thing. My mother also makes a version using Italian sausage and green beans. She roasts a garlic in the oven, then squeezes the bulbs into the pan. You do that and don't have too worry about burning the garlic.
