4 lb brisket
Sea Salt to taste
Seasoned salt to taste
Black pepper to taste
LaBelle Hot Flash hotsauce to taste
1 Vidalia onion sliced

1 tbsp chopped shallots
1 cup chopped scallions
2 cups water
2 cups beef stock
1/2 cup sliced carrots
