1 egg white
3 to 4 drops lemon juice
20 g granulated sugar
37 g almond powder
3 g matcha green tea or cocoa powder
50g powdered sugar
Add the lemon juice to the egg whites and beat with a hand mixer.
When the mixture becomes white, add one-third of the granulated sugar and mix again, beating in three batches until the mixture has a sharp point.
3. Shake the flour mixture together and add it to the meringue mixture in two batches, mixing as you cut the mixture.
Make a macaronage.
Form into a circle 4 cm in diameter.
Bake in a preheated oven at 110℃ for 10 minutes, then bake at 150℃ for 18 minutes.
