I show how to perfectly cook lamb chops in a cast iron pan very simply with my 5 Dos & Don'ts. To french or not to french? See why I don't use any oil in cast iron pan and how to know when they are cooked. Served with freshly chopped mint, vincotto or pomegranate molasses and roasted grapes.

i made some over a bed of leek whites. It was really good! I quit eating lamb at restaurants because it's usually pretty subpar, but if you pay the full market price for fresh lamb, it is way better than beef. I think the market price went up this year, and the stuff I was getting at the local Lebanese place really took a dive. I recently got an lb of chops for 40$ locally and it's just the best.

I like your way of cooking the lamb chops without using an oven; my Ninja foodie is in Louisville, and I’ll have to use my skillet! You are splendid to explain your Dos and Don'ts. This is a helpful and passionate exposé for one of the finest of all the meats. It is subtle, delicate and so excellent when we 'know what we're doing' with lamb! THANK YOU so much! 12/25/2020 Thank you for responding, the lamb was half 'butterflied' at its packaging, made it is easier to handle, and btw, it turned out superbly, even using the fat to fry breakfast potatoes following morning. The sea salt makes an enormous difference too. I almost always order (lamb) when I'm eating out if it is on the menu, and savor when I buy to cook at home. Friends did up some Sou-vie once as well - and it was absolutely perfect! I have to look into that.. But, we're big 'baaaahh' appreciators here with a careful/attentive eye for not overcooking any event. B =].. Thank you again! YES, a very HAPPY '21 to you and yours. (rhymes being all-important,) 2021 is here and it's 'looking and cooking good!' B =]

Okay, I watched and I learned. I’ve been married for over 25 years and cook, bake, grill and consider myself a “αυτοεκδικημένος σεφ”. And although my dear husband (and daughter) LOVE lamb-I can’t stand it! Can’t even deal with the smell of it cooking. But after all kids grown and gone, husband has never asked me to make this, I’m going to go today to the butcher’s and get the best lamb chops, rack or loin, I can find, and follow your recipe. Clothes pin in place! I’m goin in!

Hi Christine. I am confused, some cooking shows that use cast iron tell us make the pan super hot, should be smoking and you cooked normal. Help me to understand
@ChristineCushing
@ChristineCushing 5 лет назад
Thanks for your question. In this particular case, lamb would just burn on the outside by the time the inside is cooked , since I am cooking it entirely in the pan. It also gives you the chance to render the fat slowly , again not burning it. If you want to just get some texture on each side you can start it super high in pan a minute / side and then transfer to the oven to finish at a lower heat. I never take the pan to smoking hot generally. I hope this helps.

Louie D, cast iron cooking is a lost art, go get a Lodge cast iron skillet, 12 inch, and experiment with it. You tube is full of great tips and tricks to cook and care for cast iron. They are heavy, but never need soap to clean and make make food taste better. Plus, the more you use them, the better they become, they will be a family heirloom, because you can’t wear them out if you understand how they work. 😀

That truly was a good idea. Thank you for that tip. However, it's not all about food. Here is an important message for your souls. What category are you in? Do you speak the language of Grace through FAITH Ephesians 2:8-9 KJB? Are you saved in Jesus Christ or are you lost in the cares of this fallen, forsaken, vile, evil, wicked world? If you do not speak the language of GRACE, you are following another Jesus and are lost!! The bottom line is that, is your soul saved in Jesus Christ? During the tribulation period, those lost souls who are left behind, can get saved but will go through sever persecution and they will have to die for their faith by refusing the mark of the beast 666 and being a martyr for Christ Jesus and getting your head cut off. We are still in the dispensation of the Church Age of Grace, Christ has paid the price for all our sins on the cross of Calvary and He said, it is FINISHED!! Jesus Christ purchased us all, have you accepted His free gift of Salvation? Here's how a lost soul can get saved!! Remember the THIEF on the cross who told Jesus Christ - Please read and understand what I am trying to say. Luke 23:42 KJB - And he said unto Jesus, Lord, remember me when thou comest into thy kingdom. Luke 23:43 KJB - And Jesus said unto him, Verily I say unto thee, To day shalt thou be with me in paradise. The thief on the cross, BELIEVED truly from his heart that Jesus Christ is God and he got saved IMMEDIATELY. Jesus Christ did not tell the thief on the cross, go get baptized in water or go do Christian Science, go to a priest and confess your sins like the Roman Catholics do or Scientology or any other CULT!! On the contrary, Jesus Christ saved the thief right on the cross when he truly BELIEVED from his heart!!!! Salvation is easy to receive but 'RELIGION' complicates it!! Jesus Christ set us free from religion. RELIGION = SATAN Today is the day of your Salvation, NOW is the accepted time because tomorrow is not promised. Salvation is a gift offered to the world by our Lord and Saviour Jesus Christ, yet people complicate it with religion. Here is a message for lost souls - Jesus Christ is God, manifest in the flesh and He came on earth to die for our sins. He bore our sins on the cross of Calvary. Have you accepted His free gift of Salvation? Have you accepted Jesus Christ as your Lord and Saviour? Have you truly BELIEVED from your heart that Jesus Christ is LORD? Have you BELIEVED in the death, burial and resurrection found in 1 Corinthians 15:1-4 KING JAMES Bible? That's how a lost soul can get saved. Remember that it's NOT what we do that gets us saved, it's what Jesus Christ DID on the cross of Calvary, that's what SAVES a lost soul. All you have to do to be saved, and on your way to heaven is place your TRUST in the shed Blood of Jesus Christ and nothing else, as sufficient for your salvation, (Romans 3:25 KJB - "Whom God hath set forth to be a PROPITIATION through FAITH IN HIS BLOOD, to declare his righteousness for the remission of sins that are past, through the forbearance of God;") (Propitiation means the act of appeasing wrath, Jesus took your place on the cross.) Will you accept Jesus Christ as your Saviour by simple faith by simply trusting in his shed Blood which is sufficient to save your soul from hell? The last sentence is all you must do to be saved, and that is FAITH, not works, TRUSTING and BELIEVING in what Jesus Christ did for you, is the only thing that is not a work. Ephesians 2:8-9 KJB - 8 For by grace are ye saved through faith; and that not of yourselves: it is the gift of God: 9 Not of works, lest any man should boast. 2 Corinthians 5:7 KJB - (For we walk by faith, not by sight:) Ephesians 1:13 KJB - SAVED and SEALED until the day of redemption. Take this opportunity NOW and please get saved before it's too late for your soul!! Heaven and Hell are real, literal places. There's ONLY 1 Eternity to choose from, Heaven or Hell, choose wisely for your soul!! Grace and Peace!! Drop everything!! Please watch and get saved now, before it's too late for your soul!! ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-PBfsPphGSeE.html ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-Us7-jOaEDis.html

How can a lost soul get saved? Here's how!! The gospel (the good news)!! Salvation is not your 'good works', 'religion' or 'rituals', it's God's Work On The Cross. Those lamb chops are looking great and I love both them and the roasted grapes you made to eat with those fine looking chops. You know how to cook up the best food and I love eating it and miss being in the Air Force since they provided me with plenty of it when I was stationed in Southern California and worked for the contractor part time at the local air base.

Honey, if I could call through my tv and into your kitchen, I’d be one happy man. They look absolutely delicious. I agree with you on your suggestions. Lamb is the star. Let the flavor shine through. The roasted grapes sounds deliciously out of this world. Thank you for planning my Saturday night dinner. 👍❤️

Thank you so much ! The key to lamb is getting quality lamb. The spring time is perfect for fresh lamb. And I always prefer the smaller chops that are more tender.

I’m about to make some green chili stew and this definitely helps for the last of the 3 meats I’m using (meats used: oxtail, beef short ribs, and lamb rib chops). I’m about to have the best birthday meal ever tomorrow (5/21)!

Exactly! It seems that the flavor gets better as the meat cooks. Medium cooked lamb has better flavor than medium rare! We love lamb!

Hi Christine, absolutely love your Do's & Dont's I just want to find out can one cook lamb chops like this in a stainless steel pan or does it have to be in a cast iron pan?

I don’t have iron. It’s alright to do in a heavy bottom pan. That’s all I have. It worked well.

I am sooo glad I came across your video! I was so ready to French my rack of lamb, but when you said that you don't have to do that, I was so relieved! There's and art and skill you need to do it right, and I don't have it. There is so much meat and deliciousness on that bone. Anyway, for someone who's never used a boning knife, I am glad to say I'll do it your way this time.

Rib chops are called Cutlets. In Greece, lamb is well done and juicy because they keep basting it in olive oil as well as fat. Use Oregano or Majoram rub in some countries. Cut the fat with fresh lemon. Get it right!

Don't bother to follow anything French. French food is nothing but butter and how creative is that. People are brain washed to think that just because it's French than it automatically first rate believe me it's not.

Any chance of telling us how long you cooked the chops per side.
@ChristineCushing
@ChristineCushing 5 лет назад
I am just estimating here , so approx, 5 minutes on first side than 4 minutes on the other, but then you have to factor in the fat rendering on the sides off the top. Again I prefer my chops medium so if you want them bit less cooked, you can adjust that. There are so many variables though . Thanks for watching and hope you try it.
