As a child tindora fry was not my favorite, but I have grown to love it over time. Now when I prepare simple meals like dal rice or sambar rice or curd rice I make sure to also make dondakaya fry on the side. It not only enhances the overall taste greatly, I am glad that my kid loves it too. I prepare thondekai palya in two different ways but sharing the most common one here today. The other kavakkai fry version is even more dry but tastes more crunchy and spicier than this version. I will add that video in future. So watch, try and let me know how you like this recipe.
How to make kundru ki sabzi?
To make dondakaya curry we will first prepare masala paste. For this we roast dry red chilli, peanuts, chana dal, urad dal, methi, sesame seeds and grated coconut in a tawa and then make a paste out of it. Then in the same pan add more oil and add mustard seeds, cumin seeds, chana dal, urad dal and fry them until lightly golden. Then we add tindora and mix them well. Close the lid and wait until kovvakai turns soft. Then we can add the jaggery, fresh grated coconut, masala paste etc and mix well. Now stir it for sometime until spices are mixed with tindora well and then turn off the stove.
We can serve tindora fry with dal rice, rasam rice, sambar rice or even with chapati.

Tindora fry ingredients:
Oil 5 tbsp
Whole red chilli 6
Peanuts 2 tbsp
Chana dal 1 tbsp
Urad dal 1 tbsp
Methi seeds 1/4 tsp
Sesame seeds 1 tbsp
Tamarind 1/2 lemon size
Fresh grated coconut 1/3 cup
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Urad dal 1 tsp
Chana dal 1 tsp
Curry leaves 10
Tindora 250 gm
Turmeric 1/4 tsp
Salt as per taste
Water 1/2 cup
Jaggery 1 tsp
Fresh grated coconut 2 tbsp
Coriander leaves handful
