Phulkopi'r data chorchori: Phulkopi'r data (the stalk of cauliflower) is the main ingredient in this chorchori (a spicy mish-mash). This preparation is best made when cauliflower is in season during the winter months. The stalk of such cauliflower is kochi (tender), which means not only that it is less fibrous than off-season cauliflower stalk but that it is also less astringent. Other vegetables in this chorchori-potatoes, pumpkin, brinjal, tomatoes-add a variety of flavours and textures. The dominant spice is mustard paste, which lends it a fiery character. The phulkopi'r data, though cooked twice-first steamed and then sautéed-retain their bite. Fried dal'er bori (sun-dried lentil dumplings) adds nuttiness and crunch to contrast with the otherwise mushy texture of the chachchari.
Bengali cuisine is littered with dishes that make use of ancillary parts of vegetables that would normally be thrown away-peels, leaves, stalk and so on. Bengal, which has lived through large-scale travesties including major famines and Partition, has had to be resourceful when it comes to sustenance. Cooks in the past may have turned to scraps, not-so-fresh vegetable rejects at the bajar, and tough, fibrous parts of plants that no one thought to eat previously to feed their families, but in the process they created dishes that have become embedded in the Bengali culinary tradition.

This little dish captures the essence of Bangla cooking. It is at its best when you see age-old family recipes, created in circumstances of parsimony, using odds and ends such as vegetable skins usually thrown away as waste. The result is a nuanced, creative and intensely flavorful dish, often better than what you would make with the main vegetable. My mother-in-law makes an excellent "bhorta" with the "khosha" or skin of "lau". Its great to see Bong Eats showcasing these recipes for the rest of the world to see and learn to appreciate.

Mam u r marwari. Do u eat bengali aloo phulkopi chochori like this. It's very strange to hear u as u r marwari..marwari community never used to eat like this. I have more than 100 marwari friends as I am ca..I have never ever heard from them..plz reply me..or u may be bengali and u married in marwari community..

Beautifully done!❤️ There is a different version of data chorchori that my ma used to make where she used thinly sliced begun, shim, moola and potatoes. Also shallow fried musoor dal was used that gave the chorchori a unique texture. My mother was from Kumilla district in East Bengal but surprisingly I never came across that version of chorchori in any other households ever.!

New variation to this chachchori I must say. Have never used or had with tomato, or coriander greens....or have never steamed kopir dnata jullienes ...Will definitely try it out. Thanks for the video.

This is a winter staple at my home, along with bati chorchori, mulor ghonto & bori diye palong shaaker ghonto. Jodio amar maa shobshomoy dnata chorchori te shorshe bata deye naa. But one thing is for sure -- I'd love to thank Bong Eats for featuring these age-old recipes that put a dent in the popular notion that Bengali cuisine is all about 'machh bhaat' or meat-oriented dishes. Please show a video on how to make dal bori with different varieties as in masala bori posti bori etc. We get it from the market but would love to try it home made as it is one of the most common ingredients in Bong Cuisine . Lovely! Ami o eta kori but i don't add dhonepata. Guess it'll add extra flavour as shorshe and dhonepata compliment each other...shorshe r jhal e dhonepata di..it comes out very well.

We find it easier to weigh water than measure its volume. In any case the weight and the volume are equivalent for water for all practical purposes.
