Picanha on the Weber Kettle Rotiesserie

Picanha on the Weber kettle
Inspiration Hog'n smoke
/ @hognsmoke
You need
1 Picanha
3 tbs seasalt
For a pasta sauce i made
2 cans of crushed toamtoes
3 tbs basil
2 tsp ground pepper
2 tsp salt
4 tbs chives
Mix the tomatoes with the season and boil on the grill
Scour the fatcap
Cut the piicanha in three pieces, across the grains
Put on skewer and grill between two heatsources, if you use a grate turn often.
Cut away the outer layer when a crust is formed
Serve immediately, as it cooks, with pasta and the sauce
Enjoy

Great video. Having returned to BBQing after 30 years, First thing I bought after Weber Kettle was the Rotisserie accessory, loved Rotisserie in 80s and still do. Can't beat it.

I love your backyard and your dog looks really happy running around out there but damn that recipe looks good I'm going to try it because I just got a Weber rotisserie ring for my kettle compliments of my wife loving my obsession for really good barbecued meat

Thanks Mike. Picanha is amreally great cut. I dont find it very often though. Its reallt good as steaks or rotiesseried like this - only think i didnt like when i did it was like a roast. The meat is too lean for that so it got a bit dry.

Lasse's Food and Barbecue we recently moved and I do not have room for 3 grills (WSC, WSM, Weber kettle) so I had to bequeath my kettle to my brother in law. Going to try to use the rotisserie on the WSC

I enjoyed this video, not really familiar with Picanha cooking, reminds me of Kebab style where you keep peeling off the outer layers of meat. Looked really tasty !

Thanks Tommy. A rotisserie is very useful. I actually have 3 now. One for the kettle, and one for the spirit and one not yet unpacked for the baby q - all three found as rip offs or on clearance - i love a spinning meal :)

Everyday BBQ Thanks Mike. Only hard part was the timing really. I was a bit of a chicken but should have had the fire closer, but now i know until the next time. (My wife only eats well done - so the first few cuts of these were wasted on her. I on the other hand like it plenty :) )

+Barlow BBQ Thanks. Ots a nice piece of beef for sure. Its called top sirloin cap aor rumpmrosst cap,in the us. Tritip is the bottom sirloin. It turned out great. And the rotisserie worked perfect. Was 20% off but still a bit expensive so i will have to use it a lot :) I wanted to cook everything on the grill, its easier not having to go in and out all the time. Thanks :)

Good looking cook but I love the 2 logs you added!! you arent messing around with the wood!! I love it Go big or go home!! I have subscribed! :) not familiar with piicanha? What cut of meat is that? (where can it be found on the cow?) I want a rotisserie for my gril I have an indoor one that works but that smoke flavor cant be done inside... Or can it stay tuned!! (I know I'm weird!)

Thank you - its a great cut actually. If you look in my playlist "Beef" i have one called Picanha on the concrete offset or something like that, only a few videos in there, i explain about it. But in short the tritip is bottom sirloing, and the picanha is top sirloin, or sometimes called rump roast cap (according to brazilians totally wrong..) Its very lean and need the fatcap to stay moist. This way of coocink it was brilliant - first time i tried :) The logs i saw someone else use and thought it would work nicely. It did. Next time i will be more aggressive with the heat though and have more beloow of the skewer. It took a little too long to cook (according do the family atleast lol). Quick correction. When cutting the picanha you cut it Along the grain not against it. This is so you can then on the skewer cut along the grain again and the final cut is against the grain, when it's on your plate. Otherwise it can make it chewy

Hi. Not sure i agree anything needs to be corrected. If you watch the video you will see i cut against the grain on both cuts, rendering final pieces against. I am sure you can do as you suggest, although that would mean the second cut from the skewer is a thick piece, whereas mine were not. Try it tge way i did it - and i will try yours next time :) I totally agree when making steaks though :) Thanks for taking the time to comment.

@@LassesFoodAndBarbecue even when putting on the skewer you should cut it along the grain. That;s how we do it. Go to any brazialian steakhouse and you'll see how picanha is served on the skewer you can see it along the grain. I ended up on your video when searching for rotisserie reviews. I have a natural gas grill and need to try it out with picanha, I live in the US and it's hard to come by picanha where I am currently living. By the way, another cut you should really try is maminha. To me, sometimes is even better than picanha. I am not sure what the name in english is, but I was told by a fellow brazilian it might be tri-tip, but I have yet to confirm it.

Salvador Nobre Veiga thank you very much for the info. Picanha is actually quite accesible in sweden - tri tip is only in a few stores so far though. I will search to see if it is the same. (I really like tri tip also) I will cut like you suggest next time i make it though. I have no knowledge other than what i see here on youtube. No brazilian restaurants here that serve picanha, not really any brazilian restaurants at all i would say (none that counts anyway). Thanks again!

Very nice cooking.. The fat layer doesn't look as good as should.. When you buy picanha look for a hard layer of fat, thin but hard on fridge temperature. Put you finger on and need to be hard. This way you knew that cow was fed well..

Good job. It may have been in the text or video but I may have missed it. however, roughly how long did the cook take as I noticed the pasta sauce was on for much of the time. I want to try it but would like to understand how long it took. Thanks so much!!

Robert Weber hi Robert. I only have the weber one so cant fairly compare, but i have seen many video where ppl use them, and if i had the option to choose today i would get the cajun bandit one. Its much more sturdy, and also hugher which i like the idea of :)

Thanks for that feedback. I just got the WSM and smoking two birds. Loving it. It holds temps and does not flucuate. First time using it and feeling confident!! I believe the rotisserie just evens put the cook.

supposed to cut with the grain....so when you post cut after cooking you are cutting against the grain.

Hi, thank you for your comment. I agree with you if i was to remove it from the spit, flatten it out, and then cut across the piece. but if you look at the video at 4:13 and then atain at 7:08 you will see i cut along the side of the meat first, .the largest surface is on the sides, so it makes more sense to cut against the grain to start with. Of course i contradict that when i cut of the "ends" but those are pieces are fewer in the end, so i go with the majority being against.. I will check to see how you did it if you ave a video making one. Have a nice day! :)

Thank you. I am not really sure, its been a few months. I would say it took about an hour and 30 minutes though totaI did serve the family as soon as i had carved some off. I did not want to go too fast so that it got burnt either.

isaac oliva thanks. Its called Picanha. Its a nice piece of beef for sure. Its sometimes called top sirloin cap or rumpmroast cap,in the US. In comparison the Tritip is the bottom sirloin. Its very lean so it needs the fatcap when being cooked :)

Jose Barragan Hi. No its another cut. In the US Picanha is sometimes cslled rump cap, or top sirloin. Tri tip is the bottom sirloin, located just above the shank. Tri tip is marbled and picanha is not, its very lean. Thats why its best cooked with the fat cap intact. :) I really like both cuts, but they are seldom to be found in sweden where i live. I have a var nice video of a tri tip cooked as a brisket from a few weeks back - seriously good eat :) Thabks for asking and for stopping by :)

:) True. But it does not taste the same. This way it gets a continuous maillard effect which is what makes it stand out :) I dont mind the steak version either though

Andi Kav there’s a reason why picanha has been one of the best steak there is. Every piece has its crust and juicy part. Cooking it the usual way will only season the outside while this will season every bite.
