Thank you! Mom made Pineapple Upside-Down cake when I was very young, maybe 60 years ago... she made it in a cast-iron pan. To this day I don't know how she kept it from sticking, but it always turned out wonderful... with a cherry inside each pineapple piece.
Im 70. Have you ever had the lemon cake with the clear lemon icing? O haven't seen one in years and can't find the recipe. It was always a hit at family reunions and I wish I had gotten my Grandma's recipe! May she RIP!

I just wanted to come by and tell you Thank You for this recipe . First time celebrating Thanksgiving at my place and with my family there . We haven’t celebrated holidays in years and glad this cake was able to make them happy. I incorporated your recipe and Gina Young recipe together & it came out 💣 everyone loved it . I even got a call back after I delivered someone’s plate. Gina young didn’t do the brown sugar, Heavy whipping cream and butter on stove. So I did what you did and let that bad boy make love in the pot . Lol . Now, you didn’t put diced pineapples in those empty spots after you put the pineapple rings on like Gina Young . So with every bite I got a taste of fresh pineapple 😋 I even freaked out cause mine took longer to cook in the oven like 45-50 minutes . “Trust the process “ and never leave that stove lol . So thank you and Gina young again both of y’all have great spirits that’s how you know the food gonna be good.
So I made this twice. The first time it was super dense. So good but very dense and almost like bread. The second time I separated the egg white whipped the whites with a hand mixer and then whipped the yellows and then folded everything in. I kept periodically using the hand mixer to make sure that air stayed in the cake batter and the cake came out beautiful and fluffy everyone loved it. It almost tasted like store bought cake. I will use less sugar next time but this will be the only recipe I use since it's a larger amount and it's delicious.

Top of the morning AB to your family also! The best flour to use is King Arthur cake flour it’s unbleached and I have been using it for a long time. Now I started out as a baker many years ago - one of my speciality cakes was “pineapple upside down cake and any pound cake - carrot cake. Wonderful using parchment paper it helps with keeping it not sloppy when flipping it out of the pan. 🙏🏾
