Welcome back to The Food Experience! This time I am making a few pizzas in the Pit Boss Lexington 500 Onyx. I show you how to make the dough and sauce from scratch in addition to how to do a 1 day room temperature fermentation. Also pay close attention to how I release and shape the pizza. I am in no means an expert. If I can do it YOU can do it!
dough:
199g '00 flour
123.25g water
1/4 tsp yeast
3.9g salt
1.95g sugar
2.95g olive oil
sauce:
26.4oz pomi chopped tomatoes
1 tbsp double concentrate tomato paste
10 grams sugar
10 grams olive oil
5 grams salt

Thank you so much Kevin! I really want to get a pizza oven. One that can reach near a thousand degrees. I know that would help make the pizza next level.

I'm pretty sure they would let me review one of theirs. I checked it out and they have a propane pizza oven, pellet pizza oven and a hybrid propane / pellet pizza oven. I should ask my contact... As soon as I'm done reviewing the blender they sent me I think I will do that.

Do you think a pizza stone to start would let top cook more well done then put it on pizza wire after?

A pizza stone is only for the bottom of the pizza. It's not going to do anything for the top. With the flour that I use it really requires the hotter oven. Just received a propane pizza oven and we'll see how it goes.

@@TheFoodExperience okay wasn't sure if maybe the pizza stone would protect bottom from direct heat to let top cook longer is what I meant.

@nickc9470 when a pizza stone is heated up properly which is normally about an hour it would cook the bottom just as fast as putting it on the grill. I guess if you put the pizza on the stone when the stone was cold your theory might work.
