In this video we made a delicious smoked brisket with the pit boss lexington 500. We picked up a brisket from the butcher and brought it home for a low n slow smokin' session. Smokin' Directions
Trim Brisket and remove hard fats. Leave the bottom portion of the soft fat (1/4 inch) to protect the meat. Season with a coarse kosher salt and pepper (or favorite BBQ rub). Heat pit boss smoker to 250 degrees and maintain. Spritz brisket with apple juice or 50/50 vinegar water mixture to keep brisket edges from drying. Once the bark has set (around 4hr mark) wrap brisket and cook until tender. Tenderness can be tested by a probe and should feel like butter with little to no resistance.
