In this video we made a delicious smoked brisket with the pit boss lexington 500. We picked up a brisket from the butcher and brought it home for a low n slow smokin' session. Smokin' Directions
Trim Brisket and remove hard fats. Leave the bottom portion of the soft fat (1/4 inch) to protect the meat. Season with a coarse kosher salt and pepper (or favorite BBQ rub). Heat pit boss smoker to 250 degrees and maintain. Spritz brisket with apple juice or 50/50 vinegar water mixture to keep brisket edges from drying. Once the bark has set (around 4hr mark) wrap brisket and cook until tender. Tenderness can be tested by a probe and should feel like butter with little to no resistance.

The overnight was cool to do. Especially since you don’t have to manage the fire. Get some zzz’s during and then have it ready by lunch or dinner!

@DawgCity Backpacker I was so excited to get it on the smoker I really didn’t pay much attention lol. My guess would be about 14-15lbs because the cook time is usually a 1hr per pound. I hope you enjoy your Lexington as much as I do! Thank you for stopping by my channel!

Does your lexington have about a 50 degree difference between the readout and the thermometer on the lid?

Sometime the lid reading can be misleading depending on outside elements. But the internal thermometer that's built in pretty accurate

A 15-16lb bird would fit. If you were doing just a single brisket that would be fine. But any more I would suggest get the larger pitboss Austin or pro series. Checkout this Turkey vid. Ok cool. Yes keep the broiler on and the plate closed. You only want to open that if you were going to sear a steak or something along those lines.
