You may have never heard of these Plant-Based Runzas Hand Pies (though many cultures have a similar recipe) as they are a regional cuisine from Lincoln Nebraska. I tried these today after a workout. I showed my mother the video. He decided to take the challenge and made them. I was blown away, the red beans thrived in my mouth. The dough was amazing,. May god bless you and my mom with more creativity and prosperity Thank you for the blessing ❤

I've lived in Lincoln since '73 and my very last animal meal before going fully plant-based was a Runza. It's still in my top five list of foods I miss from the old diet.

Thank you, this recipe also similar to Russian cuisine. Maybe you can add a little bit of turmeric and maybe paprika, or smoked paprika to the dough? It will add some nice color, and a little bit more flavor.

I made these today!! Huge hit with the family. TIP: I didn't have any Arrowroot powder, but I did have Tapioca! It works great (1:1 ratio) and it made the crust crispy too. I did not have Cabbage on hand, so I used some Frozen, chopped Collard Greens. It turned out perfectly. Thank you for sharing the recipe!

They had Runzas in Kansas, still one in Lawerence. I know of one also in Ft. Collins, CO. I call them bierocks and I’m stoked to try this recipe!!!!!!!

Thanks for this! The Runza Restaurant (which somehow managed to trademark the name- don’t get me started!!) were offering vegetarian versions, a southwest style with corn, red peppers, and black beans, and a lentil, cabbage, and onion version. They were very tasty. Sadly, they discontinued them. I confess, I still cheat and eat an original Runza when I’m in Nebraska. They used to make them for our school lunches and sold them at local bakeries.

Idea... Brushing on some of the mung bean egg mixture before baking might make them brown up in the oven.

I am soo excited! I am from Omaha and grew up with Runzas. Since I stopped eating meat and went gluten-free, the closet thing I get to one is smelling them as I pass by one of the restaurants. Do you think cauliflower can be subbed for sweet potatoes and almond flower for the oats to lower the carb count?

Yes u went plant based but did u go whole food?? WHOLE FOOD plant based (with no oil) is the healthiest diet on the planet. It means no overly processed foods like cutting out takeaway meals & the junkier vegan food like meat alternatives, vegan chicken and froz pies, vegan chocky bars and cookies. THAT kind of eating (sticking to vegetables fruits legumes & wholegrains)is what creates miracles with weight loss, cholesterol and diabetes numbers and so on. It did for us anyhow.😊 But, for new vegans it’s sometimes easier if u allow yourself some of the vegan convenience foods & meat/dairy alternatives in the beginning. Lord knows it made transitioning easier & less stressful for us! All the best.🌱
