I'm using a Great Plains 1006 No-Till Drill to plant my soybeans right after harvesting my wheat. We have been going through a few week drought leading up to this day. The ground was rock hard and my target depth for the beans were 1 1/2 inches. I had some difficulties to say the least.
Prior to planting, I had the field sprayed with Liberty to kill the marestail weeds that were popping up.
Equipment Used:
John Deere 5300 with a 520 Loader
Great Plains 1006NT
GoPro Hero 5 Black

Great Plains makes a really good drill. Yea, they’re expensive but, they’re built to last & take the beating. I used a 706 no-till on a lot of acres, that’s 7ft seeding width. As long as it doesn’t brake, I don’t mind the extra time.

I have the same drill only a six footer. I went through the same scenario when I set mine up for beans. I have found soil conditions aren't always perfect so you have to set the drill each time to something a little different. Had to add weight to mine too. I don't have the turbo till colters but the "bubble" style. They seem to cut a little better for me. The colters are spring loaded so they will only do so much in very hard ground. You were correct to level it back up. The drill is designed to run level. Never trust the settings. There are too many variables. Learn to calibrate the drill and do the math yourself.

So, what are the low crops that people grow, is it soybeans? Or something else?

Most likely soybeans, they usually only get 3-4 foot tall. They’ll be green and leafy and the leaves will turn yellow and fall off in the next month or so and you’ll see the tan pods hanging on each plant which have the soybeans in them.
