When he spoke of watching Julia Child, as a child with his mother, it made me well-up. My late mother and I would watch, and many times try to duplicate the recipe for our family. Eric Ripert has such a gentle demeanor, such a genuine interest in his guests, that it really comes across in the finished video. A toast to Eric, and reservechannel for a great production. Thanks.

One of my earliest memories was my mother watching Julia Child in the 60s. She would take notes and gave me a book with crayons so I could take "notes." We were very broke and my mother figured that she would buy expensive ingredients and then be able to make food for the rest of the week. My father worked for Monsanto as a textile engineer and had an expense account to take clients out. My mother suggested that she would make gourmet dinners in our brownstone in Greenwich Village. The VP was a bit leery but came to assess the meal. Would it impress? My mother made a chicken liver mousse on toast points to start made by the lit fire in our living room, a coq au vin, butter basted mushrooms to top on noodles, a frisée salad, fresh crusty French bread. For dessert she made a bombe - homemade dark chocolate chip ice cream, a layer of fresh raspberry sorbet and a rum vanilla ice cream, all molded and finished with a piped hazelnut whipped cream. She paired it with martinis for cocktails, a Sancere and a Chateau St. Julien. Armagnac with espresso and biscotti. Almost every Saturday night my mother made dinner for esteemed clients. We at very well and I was making hollandaise, béchamel, fresh tomato sauce and wine sauces by the time I was 8. And Julia Child was on the TV every Friday night...

What's so perfect about RU-vid? They mention a scene in Stanley Tucci's "Big Night" and you can go watch it. Stanley Tucci flips the eggs, but does not fold them into an omelette. He keeps it one big flat frittata. Great scene, great show here, it's all good. Eric & Stanley, an unexpected pairing. Thanks reservechannel.

I met Stanley Tucci in the 90’s when I worked at the Baker’s Cafe across the street from the train station in Katonah NY. He was the nicest man. Throughout the years I have followed his career. He was incredible in the hunger games. I thoroughly enjoyed his book Taste. I stumbled upon this on RU-vid way after the fact. Anthony Burdain was also a favorite. And I can’t think of him without thinking of Eric Ripert. This was an amazing video.thank you.

Watching this with headphones, I'm hearing an overdub of dialogue in the left ear. Very quietly, but consistently, it's as if there's a stray audio track that's out of place and didn't get fully muted at some point in editing. Just sayin.' This is a wonderful channel and I loved this, I'm only pointing it out in case this ends up being re-packaged for a DVD or something.

No, No No, risotto should not be a clump of rice! I should be slightly, slightly runny. It should flow like lava when you tilt the pan/bowl. While I enjoyed the interactions, I the risotto was all wrong.

Italians cooked an omelet differently from the French. Tyhe Spanish also flip their omelet and if you are from Barcelona, you are probably cooking your eggs in extra virgin olive oil.

I like the dinner they made, but they were not drinking martinis. Martinis are made with gin. The drink they had with Scotch may be good, but it's not a Martini.

I loved this episode! I love both Stanley Tucci and Eric Rupert. I watched the movie Big Night again. He didn’t fold the eggs, omelette style. He just flipped it up and over to turn it. Frittata style. Stanley was right. Eric was probably just remembering being impressed with his technique. He didn’t fold it though. It was all a delicious watch, both movie and RU-vid episode, nonetheless. Cheers all!
