As much as I love coconut water, we have plenty fresh of them where I live, but this isn't good for people with existing kidney problems due to its high oxalate content. I stopped drinking coconut water, and opted to having simply water kefir.

I notice that you said to cover the coconut water with cheesecloth and a rubber band, but in some of your videos, you say don't use the cheesecloth but a plastic lid instead. Can you clarify this, please?

Love listening to your podcasts! Can I convert my milk kefir grains into water kefir crystals as I'm wanting to try water kefir to see which I prefer.

Hi Abigail! The two cultures are completely different. They require different things to grow and thrive. So if you're wanting to make water kefir you will need to get some water kefir crystals. What about harless harvest coconut water. It is not pasteurized like most other coconut Waters. Would that be better to use or worst? Thanks love all your wonderful shows and info on the subject.. blessings.

Hi! I haven't used it, but it should still work great. I've used raw coconut water straight from the coconut and it did wonderfully.

Hi Donna, I've really enjoyed your research with so many subject to maintaining our health with fermented foods & drinks. But I have a question, is it possible to ferment coconut water my using a bottle of store bought fermented coconut beverage with coconut water? I saw a You Tube where this was done without coconut crystals & over a certain period of time it produced what looked like a scoby kind of like what you would get from fermenting kombucha. I just want to know really if it is healthy. Although, I would love to try the coconut crystals, but economically I can't order them at this time. I have ordered in the past from you the milk kefir & I still have them. Thanks so much for all your help. Rebecca Freeman

Hi Rebecca, Usually re-culturing from store bought doesn't work very well. Most store bought cultured foods are not as probioticly powerful as homemade. This is because they have to slow down the fermentation process to make them more stable for selling. They can still be beneficial and wonderful. But not powerful enough to culture something else. You can use whey from milk kefir as well to make coconut water. Hello Donna, what type/brand of coconut water do you use? I understand using actual coconuts would be best, just not as practical for daily use.

I don't know what she would suggest, but I look for one which the only ingredient is coconut water and nothing else.

Hi! I avoid using coconut water with added sugar. 100% coconut water works best :)

Do you honestly think this can help with coconut allergy? I love coconut but I feel very off since I was a kid when having it. Sensitivity test leater confirmed. I get lots of energy when I drink coconut water. But after 2 or 3 days, my throat gets scratchy and I get achy.

What about orange juice, and other naturally sweetened juices, is that enough sugar in those juices to feed the water crystals?

You don't' need to add sugar or juice. The coconut water will be plenty for the kefir crystals. You can also make water kefir using just water and sugar.

I just rehydrated my water kefir grains (from Cultures for Health) and I'm not sure if they're working. If they taste flat, can they be revived? I do still see some bubbles though.

Made some coconut water kefir with my milk kefir grains and it worked OK. I think that this is a fantastic elixir.

Dear Donna, Whenever I eat fermented food like sauerkraut I feel hungry too much after eating it. Can you explain it why this happen?

Hi Walie, This could be part of a detox healing crisis. If you are killing some excess candida or bad bacteria often times this will make you crave food. Specifically bad ones. This is because as those bad bacterias and yeast die they will do anything to try to stay alive and the best way to do that is to get you to eat sugar or processed foods. @@maryam763 It really depends on your diet as a whole and lifestyle . Also are you talking about cultured foods that have been LACTO fermented with water and salt in a brine? Or you are talking about vinegar krauts? Both are technically fermented. But regular store bought sauerkraut is not the same as lacto fermented kraut like I speak of.

There is a common misconception that a detox/healing crisis only happens once. Or that it isn't very long. It really is truly different for everyone. If you stop eating cultured foods for awhile and then start again you'll have another detox/healing crisis. We have little mini detoxes a few times a year. Particularly after the holidays, were our sugar intake is a bit higher. But the amount of healing /detox time really depends on how healthy and consistent you are with your lifestyle and foods. If you only eat cultured veggies but the rest of your diet is terrible, the healing wont be as fast or as powerful. Same goes for lack of sleep or high levels of stress. So it really depends on the individual and a multitude of factors.

When you have too many crystals left, how do you use them it up. Could you put the water crystals in with smoothies?

Yes you can! That's the main thing I do. You can also give them to friends and even pets!

What are water kefir Crystal's and where do they come from?

Hi! They are a combination of good bacteria and yeasts and have been around for thousands of years and can not be recreated from scratch.

@@revealanation7778 Milk kefir grains and water kefir crystals are different cultures and require different fermentation times and different food to survive.

Water kefir crystals should only be used in sugar water or coconut water. they dont always do best going back and forth between the two. But you can do it if you have extras on hand.

@@revealanation7778 the kefir crystals can eventually fade/die if you use coconut water back to back. So I try to only use the extra kefir crystals I get from my regular water kefir. They grow so rapidly I always have extra. So when the ones in coconut water quit working I just replace them with more extras. Hope this makes sense!
