The food looks good, but this is not Peruvian Roasted Chicken or at least it is not authentic. This dish requires aji amarillo and/or Huacatay. Those 2 ingredients give this dish that distinctive "Peruvian flavor". I am sure it taste good, but without those ingredients it is just roasted chicken.
Having lived in Peru, I have to say, that is a great recipe, but most people don't use as many herbs. Just salt, pepper, garlic, oregano, cumin and lime juice, white wine or beer is the basic marinade for the flavor. Of course, you can throw in everything in the kitchen, but the basic Peruvian roasted chicken is quite simple. The most important thing is Aji sauce, and Aji Amarillo is not readily available in many places. Fortunately, I just grow it because I am addicted to it. It's disappointing that most "Peruvian" restaurants here use jalapenos. They just do not have the same great flavor profile.
