I didn't know there was a Santa Maria attachment for the Weber. Sweet! That's a nice tip and the chicken looks great.

Thank you Vic, that attachment is one of my favorites in the backyard. It is called a Gabby's grill Santa Maria attachment. They are pricey, but well worth it.

Hello, I do not yet, I can never get that thin crispy skin like El Pollo Loco. How tender it is and the fat rendered from the skin and how the texture is leads me to think it is done in a rotisserie low and slow. Ive worked in a few places that sold rotisserie chicken like that, and thats the only way I can think to replicate it. Thank you, this recipe is delicious.

I agree with you 💯 about thighs being the pollo asado choice for sure. But my wife insists on chicken breast like a Philistine. That just means more thighs for me.

Hey Jorge, I am from the Imperial Valley, I live 20 minutes from Mexicali, Baja California. I grew up here, but lived Coachella Valley and Riverside county in my Younger years. I have family in Mex and the IV, this place always brings me back.
