Poor Man’s meal has been a staple in struggling homes for nearly a century. It got us by when we were kids and it will get us through now. It is easy fast simple comfort food that satisfies empty bellies and picky pallets. It’s time to revisit Granny’s kitchen for some of her super cheap meals.

I can't tell you how much your videos mean to me. My husband was diagnosed with dementia a year ago. No one can tell you exactly how hard it will be on you to keep them at home but we've been together 40 years and there's no way I can put him in a home, so I find myself turning to your videos for comfort not just for the cooking but for the verses you go over and the way you explain them., I can't even begin to explain to you how much it means to me I thank the Lord for being in my life and for also guiding me to you. Thank you again 💓 💖

God bless you Trisha. I know exactly how you’re feeling and what you’re going through. I’ve been in your shoes. My mother God bless her soul now was diagnosed with dementia as well and I cared for her all alone for 3 years without any offers of help from my siblings. I had many days I cried and prayed to God to help me and guide me and help me help her through this wicked illness she’s dealing with. I will keep you in my prayers and may God bless you and your family.

I'm not sure if you heard of chelation it helps get rid of toxins like metals in the brain maybe you can ask a doctor who practices that and also matcha prevents neurological diseases... just read about it too I'm new to this too Many blessings on your journey 🙏

I know how hard it is. I was a caregiver for my husband for about 26 yrs of our 36 yrs together. The last 4 months he had recieved a transplant and believe me it wasn't as easy as they may have you believe. At one point t the doctor wanted to put me in the hospital. I was completely exhausted.. I couldn't leave e him. I knew that God would carry me through. He's with Jesus now and I'm alone. Caregivers are special people. Their God's helpers. Wives that love their husband's and care for them in hard times are special earthly Angels of the Lord's. God bless you and your husband. 🙏🙏🙏💕 coming your way from Ky. I'm a little over half a century old too. I ate that meala lot as a child. In summer time we had cucumber and tomato salad from the garden to go with it. Sometimes we had a can of pork'n beans with it. I never realized that we were poor; I had a loving home with loving parents that was warm, safe, and dry. And I never went to bed hungry. Amen!

I grew up pretty poor, so we ate like this all the time. As an adult, I've been lucky enough to be able to eat at amazing restaurants all over the country, but I am still as happy to sit down to a plate of this than anything else.

There’s nothing better than fried potatoes onions no matter what meat you add. Thanks Becky for the great recipe. I was a single mother from the time my two babies were 20 months and 3 months old. We ate pork and beans with hot dogs many a night. Thank you for always giving us a Bible message and reminding us that Jesus is always with us. I'm old enough to remember Dad bringing home potatoes in 25 lb sacks. As a child I never saw them packaged any other way. I also recall that no one ever called meals like this 'poor man's food.' We just called it delicious. "Thanks Mom!"

Hello James ! Back in the 1960's we had a root cellar under the house where I grew up. There were sacks of potatoes, cabbage, carrots, swede, and onions in there. Plus shelves full of home made pickles, jam, and fruit syrup. My frugal mum was an exellent cook. She'd bake 4 large loafs of brown bread every other week. This, plus mostly frozen meat, vegetables, and fish, got us through the winter. (Wich can last for 8 months here...) Stay safe and well. Love from Norway 🇳🇴

@@jamessheridan4306 Well, the supermarket vegetables are scrubbed clean, and mostly wrapped in plastic. As a chef I find this more than just a little annoying. So I shop from market stall holders, when ever I can. The plastic wrapped stuff prompts you to consume even potatoes within a few days. Or they start sprouting ! Buying in bulk from your local farmer however, is a different matter. The root vegetables, leeks, and potatoes still have their dirt on. Wich keeps them fresh for much longer. If stored in a cool and dark place.

I grew up on my grandmother's farm and she cooked this, I have all her cookbooks and her recipes, all for cooking on a woodstove. I wouldn't say it's poor mans cooking, it's how we ate on the farm. I also have all my grandmother's cast Iron cookware. God Bless.

Sister Becky, that might be a poor man’s meal but at my house it’s a staple. We just use kielbasa instead of the hotdogs. We love it! It will feed a crowd and not bust your budget. Times are definitely getting hard now so we need to fix budget friendly meals. God bless you Becky.

Kielbasa is also what I use. To extend further add canbage!cabbage! As mentioned smaller pieces allows using less meat. I try to get 4 meals for 2 people out of a package of 2 kielbasa.

Thanks Becky. I grew up on sugared raw onion and toasted Wonderbread. Also fried baloney, hot dogs, rabbit, squirrel and catfish. My folks were shanty Irish dirt floor poor. I am ever grateful for my dear mother making creative food for 4 hungry kids. Made it to 83 so po-folks food never hurt anyone. You are blessed.

This is also really good with scrambled or fried eggs. In our Latino household, we used to have sliced hot dogs, diced potatoes, onions, drained leftover beans and scrambled eggs in the morning, often rolled up in tortillas. Still something I make for my family and it's so filling!

I'm sure it is delicious with eggs, but that costs more money.. Bacon would be good in it too- but that costs even more money... This is all about a very cheap meal- its not about a good recipe but ur recipe sounds delicioso :) (!)

Yeah potatoes and eggs go well together, secret is getting the potatoes nice and browned. You can also sort of mash potatoes up and fry them that way, the way i prefer it.

Yall are great people. I need to visit my grandparents. They worry about me. I care about them deeply, but I get afraid of visiting because of a cousin that used to treat me bad, living in the same house. not exactly the same house, it's like 2 connected houses. I'm bad at confrontation, and it's really hard for me to build up the strength to man up and visit them anyways.

Thanks for sharing this recipe! Made this all my life, one of my comfort foods, but use kielbasa (smoked sausage) which costs about as much as hot dogs and tastes 10 times better. Usually I put the potatoes whole in the microwave, take them out when they're done (4-8 min depending on size) chop them up and fry everything together. I fry it in oil and add a little butter at the end for extra flavor, along with salt and pepper. Delicious, filling and doesn't feel "poor" at all!

In the early 70s when I was newly married and poor, someone told me about this recipe and I started making it. We loved it! I still make it occasionally for myself still. Back in my poor days I used hotdogs in casseroles frequently as they were cheaper than any other meat. Maybe not the healthiest but if you are on a very tight budget filling empty stomachs overrides healthy at times!

When I was much poorer I learned that I did not need meat every day, although i preferred to have it.This exact dish twice per week kept me going, along with rice or noodle meals between times. Now that I'm retired and spoiled I still eat this every week or so just to enjoy the taste.

This is a nice reminder of a meal I used to make. I also made pork and beans with hotdogs and onions cut up. Sometimes I would use a can of ranch style beans and a can of pork and beans, for a different flavor. I always made a it with 2 cans of beans, a whole package of hot dogs and an entire onion.

Oh my gosh.. I went and married a poor man that was richer than I. LOL. I would love some beans. Huge discussions happen regularly here over beans. Lol. Me.. momma, first day of camp, I'd like chili with beans. I miss them. Grandma uses her potato masher to break the beans to reduce gas btw. Genius. Acts as a thickener too.

The poor man's meal has been a strong presence for four generations now in my family. During the depression my dad would feed a family of 10 with 3 to 4 hot dogs and potatoes. When I was growing up, he made us the meal and we thought it was his original recipe and so good. He then shared with us the origins of it. I raised my children with the familiar poor Man's meal also. Now my grandson is familiar with the origins and the history of it in our family. Since he was very young, he was interested in recipes and cooking and we tried to have history through food. He has always researched recipes and made grocery list along with helping me cook. We visit many countries culture through food and last night we had a Scottish recipe. Around the world with food and through Time with the history of recipes. Thanks Becky for her bringing these recipes to light with the young people who have no idea how to stretch a dollar. In today's times, we need to teach children and grandchildren how to stretch those dollars!

@@edp3202 Using bacon fat if you have it makes a huge difference. My Mom always had a canister with a strainer on top to drain any grease to save from any bacon she cooked.

Learned of this meal from a 90-year-old woman who had a channel here on RU-vid called Depression Era Cooking. 'Edna' shared many stories, recipes, and useful ingredients gathered while growing up during the depression. I grew up on food like this, also my mom used to make bean soup. Basically pinto beans and a few potatoes and onions. It was delicious and filling. We make this dish with a couple of jalapenos to zest it up. Food is getting crazy expensive and I can still feed a family of 5 on $50 a week with this type of meals.

Love this type of meal Becky. Thank you. I didn't grow up with meals like this but when my best friend got sick and needed help, she taught me how to make all kinds of budget meals like this one as well as fresh green beans and potatoes, 15 bean soup and other recipes. Now I crave this kind of meal. I'd be eating like this even if I won the lottery. So I definitely want to see more recipes like this. My friend made eating fun again.

My Mama's "secret sauce" for baked beans always gets complements. It's mustard, ketchup, BBQ sauce, Worcestershire and pancake syrup. No measurements but you use more of the mustard and syrup than any of the others. Add that to canned pork and beans along with onions and green peppers and top with either bacon or hotdogs. If you have time bake for 2.5 hours, adding the meat for the last 45 mins. So good.

I love this meal. I also like to add eggs once the taters and hot dogs are almost done. So good. After working 70 hours a week I need simple meals. I just told my husband the other day that I love hot dogs on a bun with fried potatoes on them.

i agree. i used to LOVE to cook....two years ago, going to the store was madness..and i stopped enjoying it.....had food delivered from stores, etc. Now i focus on simple, nutritional meals at low cost. PLUS, It took a few months of pain, but I am pretty much full on OMAD (one meal a day) and the amount i could eat is now way too big! I guess training and age do this. Thanks for the recipe!

My Mom use to cook a pot of soup beans with a piece of jowl bacon, when the beans were done she would add a lb. of macaroni . I had no idea she was stretching the meal, I loved it. Matter of fact, it's really not much different than beans and dumplings.

Ever since the price of bread and flour went up I started making my own sour dough. Sour bread is THE traditional bread in my country so everytime I want something to eat I pull out a dollop and bake it. Potatoes, hot dogs/sausages and gravy has always been my go to cheap meal. We need more Depression times recipes! It was always good wholesome food and all that is necessary to stay healthy. I swear that is why bisquits and gravy were invented: to stretch meals with good taste. My mother's people had a very hard time during the depression. She picked cotton for 20cents a hundred weight and it took a long time to pick a hundred pounds of cotton. Grandpa had gotten his arm cut off in a lumber mill so he wasn't able to do much back then. My mother could cook more with less than anybody I ever knew. And it was so good. We need to teach this new generation about old times and how they managed to feed large families on next to nothing. A lot of grownups and kids today know nothing about managing when times get hard.

Growing up in the 60's as the youngest of 9 kids, this dish, fried cabbage, tuna casserole, chop suey, were all regular meals. We were grateful to have it. My mother could make a meal out of just about nothing. She would bake bread and we would sometimes get rice. Eggs and meat were special and rare treats. We were fortunate enough to have a couple of orange trees and about 6 avocado trees. We were eating avocado on toast 50 years ago and sometimes, that was all we had to eat. Now, these celebrity chefs think they created avocado toast and say it is gourmet. Recipes like this got us through all the hard times. Thank you and bless you for sharing.

I never thought of making hot dogs this way in all of my 66 yrs! I would like to see more of cheap meals that can be prepared. My mother. God rest her soul, grew up on a farm during the depression, and potatoes, pinto beans, and rice were basically their staples. They were poor, but they always had food to eat. Even in her old age she was perfectly happy eating potatoes and beans, of course with lots of onions too. Thank you for your encouraging words about the conditions of today and how not to be so worried about things. It is very heartwarming to hear you speak of our Lord. Thank you.

dad cooked this up for us now and then. you can also use one of the following in place of hot dogs: spam, mexican chorizo, any type of sausage, or any type of meat you prefer or have left over. ketchup, salsa, or any favorite herbs (fresh or dried) cilantro, oregano, parsley, basil, celery leaves, sage, or rosemary also make the the stir fry extra tasty.

I love delicious, quick, one pot meals. Also, anything cooked in cast iron always has a much better flavor. Meals around the supper table, someone saying grace, with no TV's and no phones on to interfere with the family gathering together and catching up on one another's daily activities is what cements a family. This is a time honored tradition that should be carried on from generation to generation. I had a teacher who said someone called his home one evening during their usual suppertime. He answered the phone by saying, "Do you know what time it is?" [Suppertime!] Then he slammed the phone up. The teacher assumed the call was for one of his teenagers, but he knew after that they would tell their friends not to ever call their home again during suppertime! I, too, have been offended when during supertime the lawnman has shown up to mow and I've had to interrupt our meal to write him a check - as if the noise from the mowing wasn't bad enough. But, to make things worse, his helper who does the weed eating always sounds like he's doing demolition outside of our diningroom and coming through our house. Suppertime needs to be a time honored tradition and recognized as a such.

I've made this twice since I first saw this video, and we love it! I made it for lunch on Sunday after church, and it didn't take long to cook. I just heated up a jar of green beans to go with it. I can see lots of potential for different meats, and maybe different veggies.

You could also add a few eggs scrambled into the mixture. My mother back in the 40’s would make a dish like this that was called “Cowboy Son of a Gun” which was usually bacon rather than hot dogs and water was added to make a gravy from the potato starch. Sometimes there was no meat in the dish and then it was called “Cowboy Son of a Bitch” because of the lack of meat😀👍

Thank you for reminding me of our blessings. Sometimes I get so wound up in "things" I lose my focus. "Poor Man's" dinner is a favorite of mine. I fix it for myself sometimes and don't mind if I have leftovers. Another dinner that is similar is Dried Beef gravy over potatoes. I was always happy when my Mom would fix either one of these meals. I also appreciate the reminder of the blessings that I have. I know of them but sometimes get so wrapped up in the pressures of the day to day that I lose my focus. May the Lord bless you and comfort you. I felt so close to you tonight, like you were my sister. I'm grateful for that. Love you.

You are such a blessing Becky. In conversations with my local food bank I’ve been surprised at how little many people know about throwing together an inexpensive meal from scratch. They tend to see folks preferring the highly processed “boxed meals” because they don’t know how to put single ingredients together to make an inexpensive meal. @@davidvaughn9 I don’t disagree, however, if you are starving, have limited income and a family to feed, unemployed on food stamps, etc. you absolutely would eat this instead of turning your nose up at it because it’s “processed”. @@davidvaughn9 No, I am not under any such misconception and personally never eat hot dogs, bologna and many other such processed meats. Unfortunately though, we currently live in a world where a large majority of people don’t know how to put together two or three simple and basic ingredients to make a meal. The only thing they know to do is open a box of Rice-A-Roni, hamburger helper or instant Mac-n-cheese . In donating basic single ingredients to my local food shelter, I was informed that many of those items might never be taken by those in need, because they wouldn’t have a clue what to do with them. Thanks to channels like this, folks are being blessed with both knowledge to feed their family and wisdom to live a fruitful life.

I want to thank you for being a blessing in my wife and I life, most of my family from my mother's side of things are from the Appalachians ,you sound like one of my aunts and that kitchen is like my grandmas , I'm 60 now but sure miss all that, God bless you and your family

I have my wife convinced this is my "GOURMET" Italian sausage, peppers and potatoes recipe. I do use Polish or smoked sausage instead of hot dogs, plenty of garlic and red or yellow peppers, but its the same recipe and method. My Mom called putting a lid on fried potatoes, steam frying. Whatever its called, it works wonders for getting crispy on the outside, soft on the inside fried potatoes. You can't beat quick, cheap one pot dinners that are tasty, and even quick to clean up. Love this, when I was little, the slightly-fancier version was one of our special treat meals-- kielbasa, those Hillshire farm big circle link looking ones, and sometimes we'd even get store bought potatoes obrien for the potato.

This one made me smile, Becky. Has always been a beloved meal in my dad's family, but uses inexpensive hamsteak instead of hotdogs. My kids are grown and regardless of how "fancy" they may "dine," they will request ham, potatoes, and onion whenever home🙂 Thank you, as always, for your channel!

I made this more times than I can count when my kids were growing up. We all loved it. I just thought of it as quick, easy, cheap, filling and something everybody liked. My children are all grown but, for some reason, I haven't made this in years. You've inspired me to cook it again. Bless you, Becky.

Some recommendations: Microwaving the Potatoes after dicing them for 30s-60s lets them get crispier with a fluffy inside when you fry them. Also you want to add the Hotdogs after the Potatoes get crispy otherwise they might get burned or the potatoes might end up raw. Lastly, the skin has most of the flavor and nutrients inside the potato, so skinning them might not be as good as keeping them on.

Microwaving food makes it carcinogenic. Just parboil the potatoes in water first, drain them, and then fry them in the oil. Don’t give yourself cancer with the microwave.

@@toscadonna The World Health Organization recognizes that Microwaves have as much effect on food as a light bulb does. So unless you're willing to remove all lightbulbs from your house, than you're not really increasing risk for anything.
