This is a video I've debated doing for a long time, in which I will be testing the claim that potatoes and rice can be cooked in a certain way so that it eliminates or significantly reduces the impact on blood glucose and ketones by creating "resistant starch". I STRONGLY recommend reading the articles linked below for a thorough description of resistant starch and the associated claims about it -- especially the Johns Hopkins article.
I fully expected this experiment to be a HUGE fail, and as such, I didn't approach it with a whole lot of scientific rigor. Now that I've seen these initial results, I will be conducting more tests and making more videos with a far more controlled / scientific approach. That said, you should not expect a full lab study level of science out of this or any other video in this series. I'm just one guy doing a test on himself for entertainment purposes.

I was quite surprised at the results of this test, but it's important to remember that each individual's results may vary. I would not recommend trying this out unless you have a blood glucose and ketone monitor.
Also, when I prepared the rice for the initial cook, I rinsed it thoroughly (like 5 or 6 times). I do this to make the rice less gummy, but I'm sure it also rinses off A LOT of starch.

One of the meals I miss the most is a humble bowl of rice with butter and one (or two) over easy eggs with a runny yolk on top. This is a game-changer!!!

I've been keto for almost 6 years. I pretty much hit a wall this year. I wasn't feeling good I wasn't losing anything it just wasn't working very well for me this year. I started adding potatoes and rice back into my diet and I lost weight and feel so much better.

@Char Stevens I have not been able to get the last 20 pounds off no matter what. I've pretty much been maintaining all this time. I started to go through menopause which really messed with everything making it harder to lose weight and and keep it off.

I'm so glad you brought this up! I made a batch of jasmine rice and left it in the fridge for a day. My fasting sugar was 96. I ate about 1.25 cups with some butter and tested in an hour and then in 2 hours. One hour...110 and 2 hours back to 96. Though I wouldn't eat rice often it can now be a special treat once in a while. Thank you! :-)

Potatoes became a no go because he had fried them. Fried potatoes become a fat bomb. Same applies to fried rice too. Perhaps a little less than fried potatoes. You could have eaten them plain boiled or baked in so many different ways with hardly any rise in your tests afterwards. It will surely help to lots of other readers too.

Try it without butter. The fats in the butter dull out the spike. Try it alone that when u get better results

I love ❤️ this experiment. For me personally potatoes are something l am unwilling to give up. I eat them once a week at 4oz at a time either as fried potatoes or mashed potatoes. It’s about 20 carbs and my carbs vary from 0 ( meat only days) to 40 a day and manage to stay in Ketosis. Keto, Fasting 16 hours a day eating 2 meals has helped me lose weight and control my blood pressure. I may cut potatoes to twice a month to see how l feel.

Try shredding the potatoes and soak in cool water drain rinse. Rinse till water is clear. Dry off and fry like hash browns fries up quick don’t know how many carbs it takes out but the potato starch is is carbs

I am a potato lover, mostly as hash browns in the morning with eggs. However, I don’t come close to eating the amount used in the test here. I generally make my own combination of 2 parts potato, 2 parts daikon )or other radish), 1 part scallions, all seasoned with turmeric, caraway, salt and pepper. Sauteed/browned in olive oil and butter or bacon grease, it’s very tasty. I too have read about resistant starch so generally make a batch some time during the day, refrigerate and simply reheat a portion in the morning. For me, 1 portion is 60-80g. (Depends on how hungry I am.) My personal situation: I’ve decided to buy a glucose meter to test my own responses, especially to foods I’ve been a bit suspicious about. Since my bout with Covid, my fasting glucose has been just over 100. (I was ordered off keto while recovering because my liver had also been affected and none of me was working right. My doctor feels it’s recovered enough to return to keto.) I will be taking it slow however, since at 75, my body doesn’t much care for sudden change. 🙁

White or red potatoes has 26 cabs on one medium potato. The brown russet potatoes has more. I eat 1 medium white potatoes as a side with meat and sometimes cheese like a chaddar or Colby jack or regular whole fat sour cream. Absolutely No low fat or lean foods we need the fat. 50 carbs or under less is better. I eat O.M.A.D Ketogenic . Seasonings pink salt mostly but I do use black pepper ,garlic and onion Seasonings as well.

I love this video because we who are on a keto lifestyle are so frightened of eating starch it was riveting to know what your blood glucose &ketone results were! I just want to ‘thank you ‘, on behalf of the keto chickens for making yourself as the guinea pig! This was very interesting and eye opening as far as rice & potato resistance starch affects on you! Check out the Weizmann Institute on BG and the paper Personalized Nutrition by Prediction of Glycemic Responses. There is also a video on the study you can find on youtube. They conducted a study of 800 different people eating 46,000 meals. One individual may respond oppositely to another consuming the same food. For example, some people eating bread experienced high spikes in BG while others actually had reductions from baseline, with responses all between the two extremes. I have no doubt many people will tell me that I did this experiment "wrong", so let me proactively address some things I expect to see in the comments: FIRST -- READ THE JOHNS HOPKINS ARTICLE IN THE DESCRIPTION 1) Does reheating the potatoes/rice "reactivate" the starch? There's debate on that, with credible sources on both sides. *The Johns Hopkins article I link to in the description says that reheating doesn't make a difference.* I think some people may be confusing the impact of reheating on the benefit to the gut biome vs the impact on the blood glucose. The fact is, I wouldn't eat either of them cold "in real life", so I'm not going to test in a way that is counter to how I'd eat them. 2) The potato was "baked" in the microwave then chilled for 2 days before frying the slices up in beef fat (tallow). The rice was cooked in an Instant Pot and chilled for 2 days before being reheated in a microwave. 3) Were the serving sizes comparable? I went with what would be a "real world" serving size for me, and they came out pretty close. According to Carb Manager, the potato was 38g of total carbs (34g net) and the rice was 41g of total carbs (40g net). 4) For those offended that I didn't like the furikake, I think it's the Trader Joe's brand that was the problem. I make a umami dust out of kombu, katsuobushi and shiitake -- so I definitely don't have a problem with Japanese flavors. I just made my own furikake blend based on a recipe from Food & Wine magazine (I think they call it Japanese Everything Bagel seasoning) and it's great. 5) Did adding fat with the sour cream and cheese reduced the blood glucose spike? Maybe. But I'll say again, I prepped these the way I'd eat them in real life (with the exception of that furikake seasoning). And if adding fat is supposed to reduce the blood glucose, it frightens me to think what the potato would have been like without the tallow. And if fat is just supposed to slow the spike, how come my numbers went down at hour 2? 6) This wasn't a scientific experiment (nor did I claim it to be) -- it was one guy, testing and sharing his results with a big disclaimer at the end that my results are not indicative of your results. I hope that some other folks will give this a try and post their results so that we have a larger sample size to learn from. 7) There have been some legitimate suggestions about other ways to test -- like trying the potatoes cold, trying non-resistant (just prepared) rice versus the resistant rice, trying repeated heat/cooling cycles on the rice (which supposedly makes it MORE resistant), etc. These are all things I thought about, but was unwilling to drag the filming out any longer, make the video any longer, or stab myself anymore. *There WILL be follow up videos at some point where I will test these other things out.* Thanks and keto on! I've tested the "if you add fat and protein to the carbs they digest slower" deal MANY times and found it to be a myth. I WISH that were the case... You could just eat huge meatballs with pasta or put chili on your potatoes and outsmart the carbs. It just hasn't happened in the real world. The Beat Diabetes dude tested a plain sweet potato with one loaded with sour cream/butter etc... literally no difference in the spike.

I also forgot to mention that waxy potatoes have a lower glycemic index than starchy potatoes. Hopefully others will test and let us know. Thanks for all that you do!! :)

I would have put butter on the rice to make it easier to eat and a little flavor. When I go out of ketosis I can feel it. I get hot and my stomach will hurt. I will then have malaise and hard to get going again until my body gets over it. Thanks for taking the test Steve and sharing your experience.

Dr. Fung has said that according to his research, adding fat to carbs causes an even greater spike than carbs alone. That has seemed unintuitive to me, but that has also been my experience. And probably the potatoes fried in tallow were much higher in fat than rice with a bit of salt and gross flavoring. That would explain why the spike was much greater with the potatoes. In any case, I agree with you. If I'm going to eat a high carb meal -- and suffer the consequences -- I'd want it to at least taste good.

I don't know about a greater insulin spike but, due to the way the body deals with excess glucose, it might as well be the case. High fat and high carb together is not good on 2 levels. First, the insulin does not signal to adipose cells to take in glucose and store it as fat because they can't do that. It's often said like that as a simplification. It's actually the liver that does the conversion job into triglycerides and puts it into VLDL particles. The fat cells, on reception of high insulin, take the fatty acids from the VLDL particles to store as fat. But there is a second source of triglycerides here, from what has just been eaten. Cells from the digestive system put fat from the food into chylomicrons as triglycerides and these circulate as well. The fat cells don't care where the triglycerides come from, they'll take from both. They just received the high insulin signal and they have large amounts of circulating triglycerides in both chylomicrons and VLDLs to take plenty in. Second, on the cellular level, it messes up the Randle cycle and force-feeds the mitochondria. The result is massive ROS and mitochondria damage. You really don't want to do that very often. @@Vitobandito434 I hear from Keto gurus, that fatt buffers insulin spike. Potatoes have the highest GI from all the carbs. Similar to sugar. Rice, whole grain pasta,... Is lower in GI.

Poor Steve... I felt his pain with that 191 reading. 😳 I've been so down in the dumps lately that I knocked myself out of ketosis & I haven't put much effort into getting back into it 😩😩😩. My blood sugar is always perfect, but my lack of fasting & non-exercise is keeping my ketone levels SUPER LOW 😩 But I try to stay inspired & connected by watching my favorite youtubers 🥰🥰🥰

Ya Ive been keto since 2017 and went off this last month, a few days turned into a few weeks. I did enjoy fast food carry out food but Im over it and dont like the way I feel, I feel like Im retaining tons of fluid...back to keto I go. Watching that glucose spike after a potato was painful.

From experience, it does get easier to get back in once you've figured out your particular habits and characteristics. Also, you've experienced being in keto before. Even better. Love this video, cool about rice although that's not something I miss at all. But sadly, the first ingredient in those mission low carb tortillas is resistent wheat starch, which appears to be listed as fiber, but these tortillas do not have the taste or texture of a high fiber tortilla at all. Tortillas with that much fiber in them taste like cardboard. I've tried at least eight different brands of them maybe more. those tortillas taste way too much like normal tortillas, if you ever decide to do some blood glucose testing on those, that would be fascinating to see anothet experiment with a third type of resistance starch. I am completely amazed at how much you are willing take these bullets for everyone else!

I have a type 1 diabetic wife, and I do keto. I used to eat those low carb tortillas all the time because I thought they were "low carb". I stopped eating them over the past year, but my wife continued to eat them because they were good for her diet as well (non keto). As a T1D, she checks her blood glucose all the time, and we've found they spike her sugar levels quite dramatically. YMMV, but those may just be a marketing ploy to cash in on the keto craze.

I've eaten them as wraps with meat /cheese/ lettuce and they do spike me 30-40 pts. Better than a real wrap but not what you'd expect from 4 net carbs.

Interesting. Ate them before when I was eating low carb/keto, but never tested my BG myself, just went by the lab results from the doctor. I've yet to test them this time around....had just been taking their word for the carb content. Given all the fraud in food labeling I should know better. Now I'm going to have to test them.

They definitely spike your blood sugar. I eat them sometimes. But I make sure I do IF the rest of the day after. They give you that food baby feeling. Not a good feeling

I have made a couple of batches of homemade potato salad recently. Using Steve's homemade mayo recipe. And utilizing the resistant starch hack. So far so good! I'll check my stats next weekend. Thanks Steve!

Butter on the rice next time. Love and appreciate your testing video. If the rice has the same effect on me I will start making "rice" that is 1/2 cauliflower and 1/2 actual rice. I think it will taste and smell better.

Your blood sugar returning to essentially the same as it was pre potato means you don’t have any issues. There is nothing wrong with 1 hour spikes. They are normal. And even beneficial. If it had taken your blood sugar 4 or 5 hours to return to the pre meal numbers then you would have issue. Obviously you are very metabolically healthy.

I agree with you that there is nothing wrong with a one hour spike. But my guess is that he is very metabolically healthy because he has a mostly ketogenic diet. I eat high carb meals every now and then and will experience a short spike. No big deal. I don't feel great, but I figure it's worth it for a good pizza every now and then. But if I do it too frequently, it will take several hours to get my blood sugar back to normal and I don't really feel great. I think the lesson here is that if you're going to eat a meal that causes a spike, do it for something that is really good and not some recooked potatoes, which isn't all that appetizing.

Incorrect. Many people will experience a hard crash after a large spike in insulin following the blood glucose spike. This leads to hunger which leads to more carbs ingestion and the endless cycle of eating and hunger that lead to most of us fatties being fatties to begin with. As an experiment it's fine. As an habitual behaviour, no. It won't work for most of us that are susceptible to those glucose/insulin spikes.

That spike for one hour will take you out if ketosis and going back in ketosis might take you at least 1 day with luck

Thanks for doing this! I'd heard about this reheating business, and was going to try this with pasta. I wish someone would try this with a continuous glucose monitor, because it would be interesting how high the spike really ended up getting and how whether the impact lasted hours longer than usual (i.e., at 3, 4, 5, 6 hours later). I'm type 2 diabetic, so I'm a little nervous about conducting this test but will consider doing it because it would be wonderful to eat basmati again.

I remember my physiology professor telling us about resistant starch. And yes the key is to completely cool the starch down (I don’t recall how long it needed to be cooled) then reheat before consuming.

I first read about this on DAREBEE.com (it's an exercise site) they are pretty informative....you can't reheat only warm up from cold.....reheating brings back the starch....

justfeddup How is “warming up” different from reheating in a microwave? Reheating actually further increases the amount of resistant chart. I don’t recall by how much - college was a while ago - but I’m sure you can research this in some published journals.

I used to love potatoes. I live in Idaho! My licence plate says, "Famous Potatoes." I made a run to the hamburger drive-through a couple of weeks ago and got a lettuce wrapped burger, but burgers and fries for the rest of the family. On the way home, I speared three fries from the bag. My first thought was, "Why did you ever think these tasted good?" Not having a planned potatoes now for almost 2 years, has changed my taste-buds. I've never been a big rice eater. So thanks for doing this for us Steve. On a personal note, I am simply finding so much variety in our Keto options, I don't miss either one of these starches. I think learning from Steve and putting some creativity to use has made eating much more fun and varied. For example the other day I made Steve's pancake mix and added a tablespoon and a half of olive oil to it (most waffle recipes say add oil), and for a flavor change, I added two tablespoons of pecan flour. Some of the best waffles ever! What a nice change and so yummy. I am slowly converting my wife over! She loved it. Being a fan of Jason Fung, I have had a couple of baked potatoes when dining with friends because I considered it to be a "feast" meal. My thinking is it didn't take one meal to get me in the trouble I was in, nor will it take one meal to get me out. One feast meal every few months isn't going to hurt in my opinion unless you are fighting a serious medical condition. I have been practicing "casual keto" (not strict portion control) for past 9 months and have maintained a weight between 191 and 197. I have a goal of 180, and this week have gone back to a strict program to get there. I'm in my mid-60's and for the first time I feel in real control. Personally, I'm more excited about being able to maintain a plateau for the first time in my life! Steve you have given me a lot of variety through your recipes to make this fun. I will confess - I like to eat and enjoy food. I give thanks to Serious Keto and others for my success.

It would be great to eat sushi again but I would have to make it. I have trust issues with restaurants 😬. Thanks for doing this experiment Steve. Like many hot fries w/ salt & vinegar from the fair no substitute. 😄 I’ve been known to snatch one or two from my kids. Thankfully they eat them in a flash. 🙏🏼 I am T2 and have been eating a ketogenic way for almost four years. The one food no one can replace or replicate is popcorn. We pop our own with the whirlypop on the stove top. We use the Amish popcorn (hull less) when I want some which is rarely I measure out a cup and enjoy. Sometimes in this way of eating you have to find ways to make it sustainable and if you can give yourself some leeway occasionally it helps. Now not everyone can do that for what ever reason. In four years I’ve probably only done that twice. If I remember right I had been in Ketosis about two years. It didn’t knock me out of ketosis. I do remember that. Testing yourself is really key. We are all so different and at different stages of healing. Thanks Steve. 🙂

Steve, I think your body is well-conditioned to bounce back from a "bad" meal or two but it was still surprising to see the positive change in your ketone levels on the second day. Each individual will have results that are specific to them. As a Type 2 diabetic, I'd be afraid to keep on looking for that magic solution to eating carbs. I had to go back and re-watch Part 1 of your Transformation Series again to confirm that I don't recall you being diabetic, so that glucose spike with the potatoes would probably be worse for a T2. BTW, I also took the opportunity to listen to "Walk" by the Foo Fighters. Powerful song. Thanks for mentioning it.

The problem is the majority of Americans aren't metabolically healthy. So, Steve's results might only apply to a minority of Americans. Other videos talk about diabetics getting blood sugar spikes after eating food that is supposedly resistant starch.

Stuffed bell peppers immediately came to mind! As a person on KETO maintenance mode, incorporating rice that's not made from cauliflower would make my hubby more likely to get on board with the KETO movement. I will have to try my own experiment and see how it goes. I watched another person do the same thing and she is also able to have rice like this without kicking her out of ketosis. Hi Here is the ancient Indian recipe! Now I am realizing why it always made me feel very good, improved my digestion AND elimination, and did NOT affect my blood sugar level in the least the way normally the way hot rice or potatoes affect me and make my heart race! Here is the super simple yet most delicious recipe! Cook rice. Cool it down. Pour enough water to just cover the rice, to create magic level 1. After 12 hours or so, the rice is soft, cool and has probably developed some good bacteria. Now add some finely chopped onions, cucumbers, green chillies, cilantro, pink salt, pepper, yogurt or greek yogurt or kefir to make it look and feel creamy and silky. Leave it out again for few hours. Test yourself and see how great you feel when you eat this. Once cooked rice must never be re heated. As soon as rice is cooled after cooking, it starts to become resistant starch thru bacteria looks like. No wonder it always makes such a difference for me where as hot rice affects me badly.

Fewer and fewer places in the world are having to worry about getting enough calories. The relative cost of food has gone down and cauliflower is filling and hasn't had its nutrients stripped out like white rice. I assume you live in a third world country so definitely look at beans and lentils as an inexpensive nutritionally dense food

So interesting! I had heard of resistant starch but this helped it become more clear. My partner and I started keto in May of 2018, and I hadn't felt the need for the ketone monitor or glucose testing. But since April, the ten pounds I lost are back on and hanging on with a vengeance. From what I understand, to lower the carbs in the rice, they cooked the rice with coconut oil. The oil binds with the digestible starch from the rice and begins crystallization into the resistant kind of starch. Refrigeration, is said to increase the amount of crystallization. (I've read that reheating the rice, does not reverse the process.) You didn't mention how you cooked the rice, so I thought I would mention this, with a suggestion: Try cooking your rice with C8 MCT oil instead of regular coconut oil. I hypothesize that this will yield the best outcome possible for the experiment.

Ray Sheely , I freeze white bread, toast and eat one or two slices with an egg and a lot of butter. It does not spike my BG as fresh bread would have done. The flour in the bread is baked with fat. So now it is two times cooled starch.

The husband and I laughed our fool fannies off...we have dry humor also, and that just tickled us to pieces. Especially the remark about smelling like low tide...that was a keeper and we shall use it in the future. Thank you really for taking this test...we sure wouldn't have, but were very curious as to how it would turn out. That you got a nice steady low reading on rice, was sure a surprise. I suspect, one would have to make sure that their carb values would have to stay low over the day (in other words, count those carbs), but it might be something to get some variety in there, without blowing our diet to smitherines.

Steve, I have been thinking about your test with the potatoes affecting your blood sugar. You mentioned that the rice was a few days old. I was thinking that maybe an older potato would make the difference. If you think of the mass between a grain of rice and a potato, there is a great deal of difference. Maybe the potato would take longer to change into something that was more insulin resistant. Just a thought. I appreciate so much your creativity in producing interesting content. Thanks for all you do to make your channel informative and entertaining.

That's an interesting idea. They were both cooked on the same day and chilled for the same amount of time. I didn't consider mass as a potential element. Anyhow, I'll have anywhere from 2 to 4 more videos testing this out in a more controlled manner before the end of the year.

I've always admired your videos for all the great quality you put in them, your clarity, your scientific method approach to what you do. This one brought it to the next level. Thank you for sharing! Since you do keto, you're "supposed" to have physiological insulin resistance, coming from your cells preference now to getting fuel from fat, instead of carbs. They even say we need to eat about 150g of carbs per day, for 3 days, before doing an oral glucose test, or else our results would be off the grid high. But you didn't seem to have a problem, your BG being back down, close to baseline after 2h. Or: you result with the potato was the uber high result due to your cells being fat adapted and refusing the glucose. And you didn't do bad, considering it was back down in 2h! Nice! When you had rice, it could be that you had already kind of kicked your cells back from the physiological insulin resistance with the potatoes. That would have carried to the second day. I'm guessing a lot, of course! The preparation mode still leaves a lot of "normal" carbs in that food. What comes out of this experience, for me, is that your body works wonderfully, having dealt with the carb abuse! Your insulin managed to bring your BG down within the 2h. Very nice! I hope it was only a small insulin quantity. Anyway, it did its job!🏆 Thank you very much for the videos with great content, for your approach, for not putting music... your material is simply perfect!🏆🌻🌹

I'm really, really happy that you tested basmati rice. As someone of South Asian descent, rice is the one thing I miss and basmati rice is pretty much the staple variety of a large number of South Asian as well as Middle Eastern/Central Asian dishes. Might have to cook up some biryani or Afghan pilaf.

Huge thanks for doing this experiment. It was a pleasure to watch you. The only thing, I would like to mention is that you affected glycemic impact of rice by adding sour cream and cheese. It is not just about the quantity of.carbs, but the quality of carbs at that meal is altered by the presence of protein and fat added to the meal.

Be interesting to see with different types of potatoes. I do carb cycling with organic basmati rice as a resistant starch. Rewarm rice with 2 tsp of ACV, add Furikake and TJs everything but bagel seasoning. Then add roasted seaweed, avocado, cucumber and smoked salmon with a dash of spicy avocado oil mayo. Sushi in a bowl!

I eat sweet potatoes one day a week to help balance hormones. Place the sweet potato into the fridge after cooking, eat it cold a few hours later and it is supposed to turn into fiber during digestion. I don't miss regular potatoes at all. Very interesting video~ ty.

Nothing 'turns into fiber'. It either has fiber in it, or it doesn't. This can be a function of ripeness (in the case of fruits). But really, how much you cook something affects its digestibility. If you cook a sweet potato to mush, then don't expect it to be resistant. I'd prefer to fry it in small chunks, and leave them chewy, not mushy. The trick is to be swallowing tiny chunks, not a puree form. That is the mechanism of resistant starch, IMO.

He fries the potato in tallow, showing he know nothing about nutrition. He may lose weight but will not be healthy. I found the easiest way to understand resistant starch is that the item is fully resistant in it's raw state and the cooking and cooling process brings 40 to 80 percent of it back to resistant, depending on the item. I found for me rice doesn't spike me, potatoes do but not as bad as you did. For me, this means sushi is back! (using homemade, sugar free sushi vinegar). It was wonderful 🥰

I can tell your body felt the effects. Your skin parlor changes. Your numbers tell me you have a wonderfully healthy metabolism. I also have noticed that bump with carbs. I've started to do a carb cycling of sorts, and surprisingly I've started to lose weight! And I'm maintaining weight right now, not trying to lose any. I think the key is to be balanced with carbs you don't want to over do it. I've even had a piece of pound cake, of course a real serving size slice.

Thanks for the experiment. It did not go well for me when I tried a few months ago, but I had been off keto for 6 months. The look on your face after the first spoonful of rice was classic. 😄. If you like ghee, add a dollop to the warm rice and salt to taste. World of difference! Post prandial blood sugar is usually tested at the 90 minute or 120 minute mark. Your values show that your insulin secretion is good and you may not have insulin resistance. The fact that your ketones rebounded shows you are well adapted to switch between the diets. The increase in weight shows you retained water with the carbs. A month of consuming resistant starch may show a different picture. But you may be one of the lucky ones who can an occasional bowl of rice !

After a two week stint on ciprofloxacin, I _definitely_ had some gut issues. I got raw milk from a local farmer & made my own kefir. Drinking the kefir for a few weeks completely restored my gut biome. I am truly terrified (🤷🏻‍♀️) of eating those overt starches again. I’ve lost 42# and restored my health...& I won’t go near those typically carb-rich foods again if I can avoid it. I don’t want to court the devil...lol 🙄 Eating potatoes or rice for my gut when there’s kefir available isn’t an option for me. Re: kefir, after the bacteria eat the lactose in the milk, kefir is a keto safe food. If you can make your own, or if you can find kefir in the store without sugar added, I’d highly recommend it for gut biome problems. Edit to add: I very much appreciate the info on this, tho!! It’s a great piece of knowledge to have if needed & I can’t get kefir. Thx, Steve!!❤️

antibiotics are horrible on the gut. I use sulfur powder every day for a couple weeks to get the gut back to normal, since it encourages the good bacteria and is against the bad. I use Humco, aka "flowers of sulfur", about 1/3 tsp each time. May get some rotten egg gas for 2-3 days, but then it settles down and helps restore the gut.

This is a very interesting test. I have always wondered about the Japanese and sushi. The rice is cold, so maybe yes it won't affect weight loss. I must admit I have indulged and have not noticed a weight change, but I did not do the blood/keto/sugar testing.

@@SeriousKeto if you do, it might be interesting to make note not only of your glucose and ketones, but also your general feeling (achy joints, bloating, etc.) and your weight for that day and the next (to see how much water weight might be added).

@@SeriousKeto Hi Steve!!! I must say very big fan... However, I just want to let you know that you didn't cook and cool the potatoe as needed according to the research. It also needs to be cooked and cooled for a period of time then consumed, then tested. Some articles say it doesn't matter if you reheat, some say it does. If you don't mind can you do the potatoe again under thoes conditions??? It would seem that you should get better results. Also, there are also percentages of how much resistance that may be a factor.. once again very big fan here ❤️

This opens up a WORLD of foods that I love. The first thing that comes to mind is egg fried rice! If it could keep insulin down, egg fried rice (I would think) would be a very keto friendly treat every once in a while. Obviously not every meal but would be a good "cheat" day to keep you in ketosis. Very interesting!

Very interesting! I’m going to look into resistant starches, thank you! I would probably have been right into those potatoes, though, lol! I was always the plain French fries girl, just salt, I never needed gravy or ketchup. The rice results make me want to test that out, when you live with someone that used to make fine sushi for a living, it’s hard to give that up! Though experiments with cauliflower and cream cheese “sticky rice” have been tasty, it’s just not the same. Here’s hoping!🤞🏻

There are some varieties of potatoes that are low glycemic such as Carisma and Huckleberry Gold. I wonder if they would affect blood glucose and ketones any less. 🧐

I’m glad someone made a comment about the different kinds of potatoes because he didn’t specify which potato he used. Every type of potato and where they grow is very different. I love potatoes but there are some that actually make me sick even the smell of them!

Not only the type of potato, but also the way you cook it. It looks like he baked it. If you boil rice and some starch comes out as you see the water go milky, why not try chopping and boiling the potato which will remove some starch. Then, when you reheat it, do a stir fry, that would be how I would want to eat it!

Steve, as usual you amaze me. If I were to eat a portion of rice, my Keto diet would be gone forever. Rice has been my dietary downfall for years. PLUS, you stuck yourself 12 (?) times for this test! I can test diabetics all day long, and have, but no way am I doing a stick on myself! Thanks again for all you do ~

I heard about the resistance starch a couple months ago and tried it with a baked potato, my sugar went through the roof and I was out of ketosis for 2 days. I did not know however about the good gut bacteria that this produces so I will revisit it when I reach my goal.

I'm not doing keto to lose weight even though I have lost weight I'm doing keto to bring my blood sugar's down to normal cuz I'm type 2 and they were out of control, I heard about the resistant starch a month after I started, when I did my test I use the Yukon gold cuz it's the lowest starch potato, I cut them into French fries shape soak them in water overnight then I boiled them and put them back in the fridge overnight and then I deep fry them, well I started with a blood sugar of 98, then after one hour it went up to 140 I was a bit worried that the 2-hour mark I was 89 I was lower than I started.

Yep me too! My a1c was 11.9 and after 6 months of keto it went down to 7.0. I have lost some weight but am maintaining it off.

Those are not diabetic numbers so you've been doing great Abigael! You've essentially reversed your diabetes if that is your norm. I did the same thing as you and had a spike in sugar up to over 200. It didn't go down until I fasted for nearly a day. I'm 52 though and my body won't tolerate carbs after the way I've eaten poorly for so long. I have to keep my carbs under 10 a day right now or I spike out of the safety zone immediately. Good thing I love Keto food.

Thank you for taking one for the team and giving us a good laugh. I just can’t stick myself so I just watch what goes in the pie hole. Lost 25 pounds this way. Pushed through two plateaus by having very small serving of cold potatoes and a cheat meal every so often. Spring mix salad is my saving grace. I love the results you shared. I am going to switch to rice and see how that goes. Potatoes and breads make me feel like poo! 😉

I've been reading and watching videos about resistant starch for a few months already as I find it really difficult to kick carbs out of my diet. This is probably the only video which actually shows readings and useful info. Thanks a lot! Was wondering if measurements with stuff like chilled quinoa, beans or chickpeas also have the same effect. Damn I love quinoa! You got yourself a new follower. Awesome content!

You're such a trooper for doing all this. Some commentators are asking you to re-do it. I say, they can do their own testing.....you've done enough. Some are saying to eat the potato cold...the only way I would eat cold potato is to make a potato salad. Sorry you had to eat the gross rice.

Thanks for taking one for the team so to say...but I am a food addict and always looking for excuses to eat things I shouldn't...and the top two things happen to be my old faves are rice and Potatoes..I know for me Potatoes get me into serious trouble. Just 1 steak fry turns into a whole basket of fries and then more (if at say Red Robin..YUM) but yeah I hope you didn't get sick, or have too bad of cravings for all sorts of other carby things and if you had I sure hope it didn't last as long for you as it had for me. I actually went back to being ketovore because plants make me sick and also seriously hungry. But I appreciate you doing this and all the other things you do here on your channel and wanted to thank you from the bottom of my mostly carnivore heart. ❤️

I would still think that over the course of 2 hours, I would have seen something. Like I said in the video, it didn't make a lot of sense to test these things in a manner that I wouldn't eat in real life....🙂

@@SeriousKeto well, eating keto is not how you eat in real life! You modified your eating habits. So testing it without the add on it cold would be an appropriate test. And then people can decide if they can"modify"their eating habits to include plain rice or room temp rice. 😉

I'm thinking instead of adding rice to a soup, make it earlier and cool it, then add to the soup. I know rice isn't a large component of a soup recipe, but I became wary of carbs. The Hopkins Diabetes site stated that reheating the rice wouldn't change the resistant starch, so since they could care less either way, I'm trusting that. Thanks so much for the test. Now I have a better plan to add rice to my diet without "fear."

Great video and super informative! I've been Keto for close to 3 months now and it's been great, however I was dreading the holidays, one of my favorite dishes I make for the family and of course myself is New Orleans Red Beans & RICE...I was just gonna bite the bullet and deal with the carbs from the kidney beans and the rice but this video makes me feel much better about that decision..thanks for posting your experiment!

There will be more to come. This video was kind of sloppy and not scientifically controlled. I now have a continuous blood glucose monitor, so in future videos, I’ll be able to show a graph of the glucose impact over time.

Your own homemade sushi or store made sushi? The sushi from stores and restaurants have rice that’s flavoured with lots of seasoned rice vinegar which contains sugar and salt, there is lots of hidden sugar in purchased sushi. I live with a former sushi cook and he makes it the restaurant way at home, though I bet most people don’t.

Hi Here is the ancient Indian recipe! Now I am realizing why it always made me feel very good, improved my digestion AND elimination, and did NOT affect my blood sugar level in the least the way normally the way hot rice or potatoes affect me and make my heart race! Here is the super simple yet most delicious recipe! Cook rice. Cool it down. Pour enough water to just cover the rice, to create magic level 1. After 12 hours or so, the rice is soft, cool and has probably developed some good bacteria. Now add some finely chopped onions, cucumbers, green chillies, cilantro, pink salt, pepper, yogurt or greek yogurt or kefir to make it look and feel creamy and silky. Leave it out again for few hours. Test yourself and see how great you feel when you eat this. Once cooked rice must never be re heated. As soon as rice is cooled after cooking, it starts to become resistant starch thru bacteria looks like. No wonder it always makes such a difference for me where as hot rice affects me badly.

Yes! It was about two years before I snitched one of my granddaughter's french fries and I thought it was flavorless and had a weird grainy texture I never remembered. I will caution you about the rice is that many low carb doctors will say that organ damage happens whenever your blood glucose is over 120. I don't remember which ones specifically but if you wanted to look into it some of the doctors would be Dr. Jason Fung or Dr. Westman or maybe Dr. Sarah Hallberg. I remember this from when I was researching keto for my type 2 diabetes and it always stuck with me. BUT being that it would be an occasional thing this might be more true for those who have had or are diabetic. I do like that you do these but then caution everyone to experiment for themselves and not take your results and assume they will have the same results. I heard about resistant starches back when we did Paleo and boy eating Paleo was horrible for me, it kept my carb cravings alive and on a rampage! So glad I found Keto and now I'm also dabbling in carnivore but between just liking you and your channel, I get great recipes for my husband and daughter and will indulge on occasion myself.

@@bloozedaddy I've been seeing 140 as the cutoff, but it's a fact that these "cutoffs" have been decreasing across the board, for weight, blood pressure, blood glucose, and other measurements. I wonder how much of these changes are about the science, and how much about the money in everyone being "sick." My parents ate and drank what they wanted...my father lived to be 86 and would have lived longer had it not been for iatrogenic medical intervention. My mother lived to be 95 and she would also have lived longer except that having been without my father for so long she just gave up and stopped eating.

@@hermesten1000 I think our parents and grandparents tended to live longer despite the "carbs" or sugar they ate was because they were not damaged from lifestyle diseases like is so rampant nowadays (high blood pressure/carb intolerant/ pre diabetic) from years of gmo foods, junk foods, processed carbage or even the modified grains (especially wheat) that has tainted our food system for the last several decades. My g'parents and parents grew up eating tons of real food, though g'pa was only allowed a small slice of cake or pie with his evening coffee...lest he get a fat belly. (at least that's what g'ma said. lol)

Reheating it reverts it back to starch. But cold rice pudding would make a great desert! On a side note, 1 cup of cooked rice is 53g of raw rice 😬

Thank you for doing this! I've enjoyed using my Keto Mojo to help me (and my husband) see exactly what different foods do to me, my blood sugar, and therefore most probably my health. It has been so educational! Some things have surprised me as to how quickly I get back to baseline if I don't do them all the time. I'm looking forward to trying sushi for an experiment. That way the rice stays cold, eliminating any argument about reheating converting the resistant starch back to plain starch. Someday I'll try regular rice too, but I love sushi and I *THINK* I would probably consume a far smaller serving of rice eating that. Someday I'll experiment with stir-fry, as well. Today I tried roasted potatoes tossed with avocado oil, S&P, roasted, and then broiled with goat cheese and green onions for a few minutes which is a favorite way of mine to consume potatoes. With what I considered a reasonable serving I experienced a bump but not necessarily a spike. Encouraging. Not something I will do every day or even every week, but I will be keeping an eye on this treat possibility. My hubby isn't keto and would love this. In the future I may try roasting the potatoes, cooling them, and then reheating them and broiling them with the cheese and scallions just to see if it makes a difference in my blood glucose and ketone readings. Thank you for sharing your experiences with us and therefore giving us more information with which to experiment, ourselves!

I truly don't miss potatoes or rice that much. Cauliflower, riced and creamed, tends to fill that hole in my cravings. I have a slow metabolism or at least intermediately slow. I stopped doing strict keto for a year and went just low carb ( less than 75 carbs per day) and I gained 25 pounds. I also didn't watch my caloric intake as closely during that year. I'm about a month in to a keto/ restricted calorie diet again and I've already dropped 12 pounds. To me, this is proof positive that if I want to control my weight I will need to continue to practice keto forever. This doesn't really bother me too much as I have lost those strong cravings for carbs. I miss sweets occasionally but there are plenty of low carb sweeteners that make some fantastic confections that fill that gap.

WOW!!! I did NOT expect those results. I wonder though, what your readings would have been if you didn’t make the rice “resistant” first. In other words, if you first tried eating & testing fresh cooked rice and then compared your readings to “resistant”’rice. 🤷🏻‍♀️ Just my science mind at work. Thanks as always for being our Guinea Pig. This has a lot of prospects for making future planned cheats, not so cheaty lol

@@kathybellamy5207 today at a restaurant I ate some spagetti noodles with tomato sauce. I ate maybe half a cup. An hour later and my ketones were right back to normal, in fact I think my body broke up those carbs quick and keep right on going - now if I ate a whole plate of spaghetti the results might have been a bit different. Overall I have found sugar is way worse than carbs to knock you out of Keto, but a small amount does not slow the body down much either, it's all about the amount your body can handle

@@jimbeaver27 very true. Jason Fung has often said all carbs are not the same. Sugar, fructose carbs are best avoided at all costs buf rice, potatoes, pasta are different ... not to go overboard of course but can be utilised by a healthy body as fuel in moderate amounts.

This was interesting. When I was following "The Carbohydrate Addicts Lifespan Program" I had a half cup of rice with my evening meals, lost weight like crazy. I"m not ready to try it again yet. Maybe later, when I'm closer to my goal weight. Potatoes though, nope, I had my fingers crossed, but oh well. I like french fries and potato chips way too much anyway. I have zero desire to stop eating them once I start. No really, I love potatoes. I don't need ketchup on my fries, a dash of salt is all. I always thought fast food should sell french fries by the bucket, but alas, they did not. ;-)

@Nancy I agree. Fried potatoes and onions are and will always be my favorite food. I have never eaten ketchup. I love potatoes. I want salt and butter with them. But, yes I agree potatoes are heaven and I cannot eat them. Potato chips are divine, plain ones. I could eat the entire family sized bag...but I'm half Irish on my mums side and we had potatoes everyday when I was growing up. Potatoes are comfort food.

Fellow potato lover, here. I could live on those things. And I'm not even talking potato chips or french fries (I have been abstaining from stuff like that for many years). But just plain, freshly boiled potatoes (good ones), with butter and salt...or lightly mashed up ones with cream and a dash of nutmeg. I just went on a week long binge after more than 6 months of sticking to my keto diet and loosing almost 20 pounds...and potatoes are largely responsible for it, believe it or not. I wasn't even craving sweets. Just potatoes and my brother's homemade sourdough bread. But once I gave in, it just got worse and worse, until I ended the week with apple pie with nutella on top at 11 pm on sunday night. Back on track now...but man..those potatoes sure were good ;-))
