Doug, the difference between curds and whey is this: when cheese is being made, a specific culture of bacteria is introduced into the milk; this makes them consume the sugars in the milk and turn it into acid, which causes the normally basic (chemistry) liquid to become acidic. This makes the proteins in the milk change form, and the aggregate of that protein is the curds; the water and uncurdled parts of the milk that are left behind is the whey. Additional mechanical processing and more importantly aging is what causes the curds to become cheese; differences in the process and substances used determines type of cheese.

I go to the weekly game night that he attends if he's able; unless he's out of state, he should be there tomorrow; I'll ask if the Frank thing is legit. Honestly, from the responses he's done to similar questions, it could be 50/50 for if it's staged or not.

@@FallenB1ade Ok, this is directly from Doug, but apparently how this encounter unfolded is that Doug and Frank had a window of time slotted for what I understand to be a routine meeting to discuss whatever it is a business leader and a lawyer talk about. Doug told Frank that he'd be at this poutine truck, and to meet him there, but knowing Doug and his practical joker side, my guess is that he gave Frank the impression that he was having lunch there, not that he would be behind the counter making him the poutine. So, while the encounter was arranged, it wasn't staged. Frank knew he was coming to meet Doug, just not HOW he was going to meet him; Frank doesn't strike me as a poutine man.

"slaw" basically mean salad. It's from Dutch "sla", shortened from "salade". Cole comes from the Dutch "kool" which means “cabbage”. So "coleslaw" is "cabbage salad".

Bobby, they make "Vegan Gravy" because gravy is made from stock/broth which is boiled animal carcass. "Beef Base", that's the part the vegans don't like, it's what makes gravy so damn tasty. By all means skip the curds, but give the meat juice a shot.

Unless butter is a problem. As they used butter to start the roux. Now a gravy which just used beef fat for the roux would be fine for someone lactose intolerant. (a roux is equal parts fat and water, and is the thickener for any gravy, and also for most cheese sauces)

@@TenkawaBC Unless he has some other reason to not use them, things like Lactaid exist for that very reason. And all roux isn't made with butter. You can use animal or vegetable based fats for it instead.

@@TenkawaBC You can also use milk or cream, but typically you'd use dairy and/or animal broth along with flour to make a proper gravy. I mean, with anything in cooking there's exceptions and different kinds; I just know what I use when I make it at home.

Usually roux is made with butter, yeah, but as others pointed out a lot of fats will work. That said, being dairy allergic, unless you're making it yourself from scratch, odds are there's dairy in there somewhere. It helps lend a creamier texture than just using beef base and a lard based roux would give. There are some other things you can do, but sadly dairy is a tried, true, easy winner for 99% of people.

We have a place here in Canada called Smoke's Poutinerie and every time I go there, I always get their Triple Pork poutine, which is usually bacon, pulled pork and Italian sausage, however I always replace the sausage with extra bacon.

As a Canadian, I'm pretty simple. I like the classic. You need good fresh and squeeky cheese curds with a strong beef gravy on rough cut fries. The only thing I might add is some pulled pork. Respect to these ladies and their awesome effort to spread the greatness that is poutine to our southern neighbours.

My fav poutine was from a place in PEI. Thanksgiving style poutine. Fries with curds, turkey meat, stuffing, cranberry sauce and gravy. Top poutine I've ever had.

Cheese is fermented/stationed/cured curds, that's the main difference. Cheeses vary from each other based on that process and which fungus are introduced while curds don get that different unless you change the milk itself.

Bobby, as a chef I can tell you that gravy can be with or without dairy. Gravy by definition is a roux thickened liquid, that liquid can be dairy (cream, milk, etc), stock (veggie, beef, etc), or even water if you're a psychopath.

For my poutine, I'd do two versions: 1.) Take the curds and turn it into a Paneer curry over the chips (fries). Sprinkle on those spring onions (scallions). 2.) Put a more coastal Mexican flare to a Canadian classic. I'd use shrimp with the chips and curds. Put crème fresh (or just sour cream?) and salsa fresca (or just pico de gallo?) on it. Sprinkle more coriander (cilantro) if needed.

I love your fieldtrip episodes. Ok guys, food facts. 1. Gravy is made from the juices of roasted meat, not with any dairy. So, they have to make a vegan version that doesn't have meat in it. Come on Bobby. 2. Cole Slaw translates to Cabbage Salad, pretty sure that's German. 3. Haven't you guys ever heard the nursery rhyme, Little Miss Muffett sat on a tuffet, eating her Curds and Whey? To start making any cheese, the Whey (liquid part of milk) has to be separated from the solids in milk (mainly casein, which is protein, and the butterfat) which is what the Curds are made up of. Then cheesemakers take the curds and turn them into all the other kinds of cheeses we eat. Curds on their own are best when eaten as soon as they have been made. When they are still warm and squeaky.

For gravy -> well, there's no set recipe so I'm sure many folks DO put in milk to it, but it certainly isn't a guarantee. The most basic recipe IMHO is to mix the left over oil & juice from cooking the main meat dish with flour & water.

except if youre making something like a sawmill gravy, which is *typically* pork sausage drippings instead of beef, add flour and milk to make more a poor mans bechamel sauce (sans nutmeg). also they specifically said they made a roux which is butter and flour, so theres your dairy in these ladies' gravy dish.

@@MasterEnsis The German word for cabbage is 'Kohl' pronounced the same as the English 'Cole', so it could have come from German. 'Slaw' however doesn't have anything I can think of close to it in German (at least off the top of my head). My guess is Dutch or something similar, which can often have similar words to German (as it is also a Germanic language).
