This homemade Prawns Pickle or Jhinge ka Achar is a spicy and tasty condiment that is so easy to make.

For The Spice Powder:
Ingredients:
Coriander Seeds/Dhaniya - 2 tsp
Cumin Seeds/Zeera - 1 tsp
Fenugreek Seeds/Methi dana - 1/2 tsp
Mustard Seeds/Rai - 1/2 tsp
Black Seeds/Kalonji - 1/4th tsp
Procedure:
1. Roast the above spices till they turn brown.
2. Remove from the pan and grind together into a very fine powder.
3. If the spices are coarsely ground, they will separate from the oil, therefore, grind the spices very finely for that fine consistency gravy.
For Marinating The Prawns:
Ingredients:
Prawns/Jhinge - 1/2 Kg
Salt/Namak - 1 tsp
Red Chilli Powder/Lal Mirch Powder - 1 tsp
Turmeric Powder/Haldi - 1/2 tsp
Spices/Garam Masala Powder - 1 tsp
Lemon Juice/Nimbu Ka Ras - 1 tbsp
Procedure:
1. Remove the veins of prawns. Wash and strain its water.
2. Add salt, red chilli powder, turmeric powder, spices or garam masala powder and lemon juice to the prawns.
3. Mix well, keep this aside for marination for about an hour.
For The Pickle:
Ingredients:
The Ground Spice Powder
Marinated Prawns
Oil - 250 ml
Cumin Seeds/Zeera - 1 tsp
Mustard Seeds/Rai - 1 tsp
Crushed Garlic - 1 tsp
Washed and Strained Curry Leaves - 1 tbsp
Salt/Namak - 1 tbsp
Turmeric Powder/Haldi - 1/2 tsp
Red Chilli Powder/Lal Mirch Powder - 4 tbsp
Lemon Juice/Nimbu Ka Ras - 2 tbsp
Procedure:
1. Add oil to the pan. Add the marinated prawns and deep fry in two turns till they turn light crispier.
2. Remove from the pan and keep aside.
3. Into the remaining oil, add cumin seeds.
4. Pickles require a good amount of oil that act as a preservative as well.
5. Add mustard seeds. Let splutter.
6. Add crushed garlic and curry leaves.
7. Add the fried prawns and fry again for 60 sec till there is no more moisture in them.
8. Switch off the flame and then add the spices to prevent burning as the oil is already very hot.
9. Add the ground spice powder, salt, turmeric powder and red chilli powder. Mix well.
10. Allow it to cool. Add lemon juice and mix again.
11. Prawns Pickle is ready. If you add a preservative like sodium benzoate it will have a longer shelf life like 3 months or more but I never prefer to store the non-veg pickles for a longer time.
12. Without sodium benzoate, you can store in the refrigerator in an airtight container and use within a month.
