Hi all,
This is how I prep vegetables for later making stews, soups, and vegetable stock. This is just the vegetable preparation, you will still have to add your base, like puree from tomato, or cream for creamier soups, or stock for your stew. You can add chicken for a wonderful chicken soup. Many ways to go on this, but you have to start with a nice variety of vegetables. Washed chopped and split into batches. Also could be used for crockpot cooking.

Zucchini
Green Bell Peppers
Poblano Peppers
Red Cabbage
Broccoli
Red Bell Peppers
Tomato
Brussel Sprouts
