Hello and welcome to Old Ways Gardening and Prepping. 🍀 Would like to welcome you out to the shed of many names on this chilly evening. Fixing to warm this shed up and make a big batch of Rebel pressure canned meatloaf. Yes you can can meatloaf as long as you follow certain directions. It is simple and easy and anyone can do it.
Now I will say it does taste different from regular oven baked meatloaf because there is no fillers in it. The only difference in the flavor is it tastes lighter that is all. We were very surprised the first time I made it and definitely decided we wanted to keep making it and adding more to our pantry shelves.
Below you will find the list of ingredients that I used. Now of course seasonings is optional and you can choose to use other seasonings that you like. Hope you enjoy this recipe.
Anything with the sign * is optional.
Canned Meatloaf
9lbs. of 81/19 ground beef
1 container of fresh Pico de Gallo, drained *
2 medium onions, small diced
2 large bell peppers, small dice
4 large scrambled eggs
2 TBsp's dried oregano *
1 TBsp dried onion powder *
1 TBsp dried paprika *
1 TBsp ground black pepper *
2 heaping TBsp's of dried parsley *
1/2 cup dehydrated mushrooms *
2 TBsp's Slap Ya Mama seasoning *
1 heaping TBsp of garlic powder *
2 TBsp's minced garlic *
3 TBsp's of liquid smoke *
Mix all ingredients together very well making sure that all the meat, seasonings and vegetables are mixed throughout the meat.
You will want to pressure can pint jars for 75 minutes and quart jars for 90 minutes. Now for my altitude I pressure can using 10 lb of weight. It will depend on your location and what poundage of weight that you have to use.

Thank you and good morning to you as well. Yes you have me beat hands down on that brutal cold. In a heatwave compared to your temps. 😂 Here we are 27 with a 17 wind-chill. I followed your recipe *omitted the pico & bbq. Used 1/2 hamburger & 1/2 ground turkey breast. Oh my heavens, delicious! I will keep this recipe for the next batch. The spices are everything!

Yes it is important to spice it up and use what you like and have on hand. I never seasoned my ground beef beyond salt but I used to can one pound of hamburger to one pint jar. I learn that from some Mormon neighbors I had when we lived Virginia. Mary said, "If you get one pound in a pint jar, you know you've packed it tight enough."

Yes as long as it is just meat only you should get a pound per pint jar. Which in my opinion is a perfect amount for two people. Reason I season the meat before canning it is just to make sure in case we don't have it when it is opened. It is fully ready to eat or use. Take care and have a blessed evening. ❤️🍀

Pressure canning has a tendency to change the the taste of the meat, especially meatloaf. Reminds me of dog food. My next batch will be with salt only. Totally enjoyed your video ❤️👍🏻

Canned five quarts of vegetable beef soup yesterday. Remembering from how my mother showed me. But can not remember how long of a shelf life it has. Looking online, what I'm seeing is two to five years. Wanting to see what your opinion is. The soup turned out almost like my mother's. She would use fresh vegetables out of the garden. I froze fresh from last year. Can't wait to try your meatloaf recipe.

Oh that sounds wonderful and I need to make another batch of soup soon for here. To be honest I have eaten canned food over 10 years old before many times. As long as it is stored well, and the lid does not pop it should still be good for way longer than they say. Just check it and let your nose and eyes tell you what to decide. Thanks so much for this amazing recipe. I'm a coward when it comes to spicy food so I am going a bit lighter on the spicy stuff LOL My question is - can I use fresh mushrooms instead of the dried and do you happen to know what the quantity will be if I do use fresh? Thanks again from Australia.

Hello and welcome to my channel Gggls844. Happy that you enjoyed the video. Since it is fully cooked you just heat it and eat. You can slice it then fry it, heat up in the oven and in emergency situation only if you can't heat it up straight out of the jar. You can also break the seal and sit it in hot water to heat up. You can slice it up and pan fry them. Also can break it up or slice and heat up in gravy or spaghetti sauce.

Hello and welcome to my channel. Glad that you enjoyed my video. Slap Ya Mama is one of several Holy seasonings that we use in the South. It is a family owned business that makes many wonderful products. Personally don't use season salt because it has msg in it.
