Defrosting meats to can in case the hurricane turns my way. Lost 2 freezers full of food to Ida! I like to fill empty spots in my canner with beans since processing time is same. I will def be making this recipe! Thank you .. as always.. for clear directions!

I am a 3rd gen FL native and every May-June before hurricane season really kicked up we would have a "hurricane prep party' we would get all of the meats out of the freezers and can em up and spend a week mybe two canning everything in the larg freezers we had and any produce we got out of the gardens would be eaten fresh for a week then canned to preserve OR canned right away due to the possibility of losing electricity. We would ONLY put 1 weeks worth of meat back into the freezers along with large amounts of jugs of water so if the power did go out we would have ice to keep things cold AND have water to use as the jugs would naturally defrost. Saying all that in hopes the idea will help someone. My girls do NOT care for beans by themselves but LOVE Spanish rice AND are excited to try this!

Strangely enough, I just took 17 pints of seasoned pinto beans out of my canner about 15 minutes before watching this. What can I say??? Great minds!

I do a similar recipe but use tomatoes with green chilies instead of bell pepper and plain tomatoes. I also use some Beter Than Bullion to season the liquid and add a small amount of chili powder. It's absolutely delicious!

Thank you, Leisa! I'm sooo far behind with everything gardening, canning, planning, cleaning and I'm so stressed out! 😱 We've had an insane amount to do at my job that all I do when I get home is lay down on my bed and stare at the ceiling. But tomorrow is the last day before I have 3 weeks off and I hope I'll be able to catch up at least to a degree. I've also decided to take some time off this autumn (I have 6 weeks total that I can take) to forage for mushrooms, do some gardening and build some more shelves for my pantry. Thank you for all the inspiration you give us, the knowledge and the recipes. ❤

random aside, pinto beans (probably other beans to) are one of the few foods that are actually more nutritious after canning, something about pressure canning explicitly makes certain nutrients more bio-available than any other cooking method even other forms of pressure cooking.

Leisa, I really enjoy your canning videos. They are great for people learning to can because you explain things well and show how to do things as you go. I watched this last night as I was feeding my dogs, and I was thinking it's like being in the kitchen right there with you as you are showing things. Yum! I love Pinto beans, no matter how they are made and you can never go wrong with Pinto beans. My Mom's got a very good recipe for Pinto beans, as she makes hers with venison sausage, as my Dad has gone deer hunting before and they get the deer meat processed at a local butcher shop near us, as my Mom also uses ground up hamburger meat in her pinto beans but its ground up dear meat and she also puts in diced tomatoes in her Pinto beans as well and thank you for sharing your delicious recipe with us and I'll pass this info onto my parents this weekend sometime, as my Dad has utilized jars with those types of lids like you have, for Salsa, Pickled Okra, and Cucumbers as well 🙂😊. I'm a new and recent subscriber to your channel as well and I'm glad that RU-vid recommended your channel to me yesterday. Also, I watched your video from about a week ago last night when you mentioned about FEMA and what not, and you are correct when you mentioned about no matter what happens, we still must go on living our lives and not live in fear. I served in the U.S. Army 2011-2014 and I'm a disabled US Army Veteran. There could be a time sooner than later, that my military skills will come in handy and if that happens, then so be it. I'm both born and raised in Texas and I live in Texas currently too and you know how it is in Texas, we're a border state and we've had issues with our borders for decades. Also, you and your family be safe and everyone else and your families be safe too.

Thanks, Leisa... We love beans and I can a lot of them. Pinto is our bean of choice. We buy fresh from the elevator whenever possible. I will for sure try this recipe. Looks delicious.

Oh this sounds so good! Can’t wait to can these & try them. I have a couple of questions about the products you use. Which separate burners work well with pressure canning? I’d like to know the brand of that bowl type pot you have the liquid-y tomato mixture in. I think it’s the bomb! Happy 4th 🎆

Question.....can the beans and tomato seasoning mixture be all combined after their cooking/heating? Im just thinking it would be a bit more even distributions of everything and a bit easier. Is there a reason why it can't be done? Just want to make sure im staying safe.

did get a bit of a reminder to can me some beans, got an instant pot and had been exclusively using it, as a whole food vegan being able to go from dry bean to cooked bean in an hour is game changing for improving diet, BUT that's not terribly useful if the power goes out, had to 'cheat' last month when the power went out, avoided opening fridge/freezer so ended up eating cereal for 2 meals because all my beans where dry.......

This looks yummy! Could the dry spices be changed in order to have an Italian profile? I know the peppers, onions and tomatoes would stay the same, but they would be used anyway. I also see this as a base for soup, maybe with a jar of Ugly Chicken added😋 Thanks for sharing. I have another 8-pound bag of pinto beans to can.

This would depend on your elevation. Your pressure canner will tell you, but you have to know your elevation.

I've heard that garlic in canned foods intensives, so I've always been worried about adding it to any of my canned foods. By the amount you used, I'm sure that meth isn't true.
