The jackfruit you bought was more towards the ripe side since the fruit was sweet. The ripe tendrils are harder to cook with. An unripe fruit is easier to cook and more tender.

in India we eat jackfruit a lot!! my favourite part is jackfruit chips made out of under-ripe jackfruit, we deep-fry the under-ripe yellowish tendrils until they're crispy and add a sprinkle of salt,, it's my favourite chips ever

Raw jackfruit is used for cooking in Indian cuisine. Specially for savoury dishes. The core and the seeds (unripe) are cooked as a gravy/curry while the strings are made into chips (deep fried). The fruit is used when ripe for sweet/desert recipes or eaten fresh.

June is probably one of, if not the absolute top, of chefs that I watch cook. Just the "hmm, ok, let me just pound out a half dozen "delish" recipes without really any research" that she brings to everything. Can't wait for more!

Typically people use unripe/young/green jackfruit for cooking purposes because it doesn't have the sweetness of the ripe fruit and can easily absorb flavor. So if June is planning to eating only jackfruit for a week I would highly recommend her also purchasing canned young jackfruit in brine or water to experiment there (plenty sources available on Amazon) because fresh young jackfruit is really hard to find. Some sources might site that jackfruit is high in protein but it's mostly in the seeds and not the fruit portion so be aware of that when thinking about jackfruit for a week. P.S if you do find fresh young jackfruit the seeds aren't fully developed yet so if June is planning to use the seed as a protein source buying plenty ripe jackfruit might be the way to go (because I haven't seen sources selling jackfruit seeds yet).

I am a Bengali girl( 🇮🇳 India ).. I actually have jackfruit tree in my backyard, so I consume it a lot. Basically, jackfruit is normally produced during April- June. When it's still unripe, like shown in the video.. You can't eat it raw but just chop, boil them and use it to make dishes. It's actually a substitute of meat and is pretty tasty. When it us ripe, it actually grows HUGE in size. You tear open the skin of it. It actually produces delicious fruit. Like the jackfruit consists of tens of these yellow fruit like objects. Eat it. The seed is inside those. Then eat the seeds too. Literally, except the skin, nothing is wasted.

@@irishpixierose it actually grows huge in size.. It's like one big and heavy fruit.. Almost 5-6x your face's size Usually they emitt a pretty sugary smell when they are ripe. Its a characteristic.

Hi June. I am from South India, here we cook jackfruit a lot. There is a jackfruit(raw) and a jackfruit(ripe) versions. We use the Raw version of the fruit, cut off the outer skin and then grate it into shreds to make curry with it. We call it “Panasa pottu koora”- translated- “panasa”-jackfruit; “pottu”- grate; “koora”- curry. It is a delicacy dish and takes a lot of time to cook. You can try the south Indian version of jackfruit curry and may be bite into real tastes of jackfruit curry.

I think unripe jackfruit is better for pulled pork. Because once you boil it, it’s as tender as pulled pork, though in my household we usually make it into a Filipino style salad.

I’m from Brazil and we have jackfruit trees in every city park or public area you can imagine. The cool thing about is it can feed a poor family for a few days. Kudos to jackfruit!

As a Jamaican and someone who grew up eating jackfruit as soon as it's in season I'm glad to see how well u used it especially in it natural form and not from a can . In Jamaica we don't normally eat the fiberus parts but as for the fruit and the seeds they are the best especially if the whole fruit is well ripe ..... The fruit also makes a great jam or chuckney

We blend the fruit without the seed and then sieve the juice out of it and use a typical banana bread recipe to make jackfruit bread recipe. We also use raw banana as replacement of meat. We also use the seeds as we would use potatoes to make chicken or vegetable curry. We also mash the seeds and add salt chillies peppers and mix with it dried river fishes and the outcome is like this powder. Use a mortar not blender. Also add green chillies and coriander. Spicy. Serve with rice.

We lived in Hawaii and were the chefs on a farm and grew these, so we learned lots of ways of cooking with them . I actually like the seeds better than the fruit because of their versatility in being able to cook lots of savory things with them. My favorite is using the seeds to make hummus in place of chickpeas, or using them as a potato substitute, like in curry, potato salad, etc. I will say they are kind of a pain to boil and get the shells off but love them!! We used the tendrils for vegan pulled pork, and then the fruit we always used in dessert type dishes or just straight up ate it. If you aren’t planning to make a dessert than I like using the fruit just slightly underripe because then you can use for all kinds of savory meals!! I love the texture of the fruit!! Also the core can be cut up and used as any other starchy vege in like stir fries, curries, literally anything. It was fun watching you use this for the first time, it took me right back to when we were googling all the info too and asking all the locals how to use it!! 🤩😎😆😍

This gal is amazing, my favorite chef to date. I’m known within my circle of friends and family as the person who can cook with anything. When most people think their cupboards are bare, I can throw something together out of nothing. LoL It’s refreshing and exciting to see someone so like minded and I haven’t run across anyone else like June on the web anywhere who creates and experiments with food like she does. Cooking to me is a creative process but it’s also an experiment. You win some and you lose some, not everything is going to turn out perfect every time and June gets this.. and she doesn’t apologize for the occasional “flop” either. In Nepal its a common fruit ,locally available everywhere ,cutting jackfruit is so hard beacause of the stickiness so we put lot of oil in hand,knife while cutting it and we use raw jackfruit as a vegetable for cooking curry or stirfry and when its ripe as a fruit ,we sundried the jackfruit seeds and then dry roast them and eat with some sichuan pepper and other spices its so good

Bengali here! The seeds are edible and really delicious. What we do is dry them out, remove the outer skin and then add them to our food. They’re excellent in fish curries/stews- they have a nutty taste and texture and it’s amazing. High recommend.

I'm from Kerala in South India. Unripe jackfruit is more starchy and neutral tasting. We separate the unripe fruit from the seeds, thinly slice and cook it in a pressure cooker to a mash. This is used as the starch in a meal and eaten with some sort of gravy, either a chicken or beef curry or loose coconut chutney. Unripe jackfruit can be preserved by separating the fruit and slicing it and drying it in the sun so that it can be rehydrated and cooked into a mash later. You can also deep fry in oil to make chips. When you separate the seeds from the fruit, they come in a thin membrane with a fleshier base, and this membrane and base can be stir fried and eaten though it is very chewy. The seeds can be taken from ripe or unripe jack fruit and dried for a few days. The seed will have a shell like thin white cover and a brown coating on the seed itself similar to what you see on almonds. This can just be scraped off. Then slice the seeds into slivers lengthwise, about 6 or 8 per seed, and stir fried dry with coconut shards and seasonings. I have mainly seen two varieties of jackfruit, and I can only distinguish them when they are ripe. The first one is usually what is commercially available with a firm texture. This is best eaten as is, or can be added to a variety of dishes or salads as a sweet tropical fruit topping. It can be mixed with coconut, palm sugar, cumin and cardamom and used as a stuffing for rice flour dumplings that can be steamed. The same rice flour dough can be smeared or caked onto wilted banana leaves. The same jackfruit filling is laid on one half, then folded over to create a kind of quesadilla with the jackfruit inside and the banana leaf on the outside. Then it is steamed and had with tea. This is called an "ada". The other variety has a less firm, more fibrous but much sweeter fruit. The texture is reminiscent of a durian to me. The texture is the biggest issue with eating this fruit ripe as you may gag over the very long fibers as you swallow. But once you get used to it, it is super sweet and a treat to eat. This is often used to make "kumbilappam" or a hand held dumpling. The ripe fruit is separated and mashed- you can process it if necessarry. This is again mixed with palm sugar, cardamom, cumin and coconut and then stirred into a dough of rice flour and boiling water. This is then encased in a cone of a special large variety of bayleaf (which would impart a unique flavor) or strips of banana leaf to make a triangular shaped mass about the size of a hand pie. This is steamed and also enjoyed as a teatime item.

One need to put mustard oil/some kind of thick oil on hand and knife before handling jackfruit unless it Will be difficult to clean. Also pressure cook raw jackfruit to 1whistle.

At my house, we boil the jackfruit seeds and use it in a bunch of curries. There's one very interesting one, with dried fish and the seeds. Also just making a curry of some leafy veg with the seeds is so delicious. I don't know if it's common in South India, but this is something my grandma used to make and she learned it from her parents when she lived at our native place, cuz there are a lotttt of jackfruits there.

In the PH, we use unripe jackfruit to make a white soup with cream. We use the unripe fruit with the seed, when it’s cooked, the seeds are so soft. It’s just goooood

In the Philippines we have the seed as snack. We grilled, baked or boil it. The fruit we make it as jam. We Put it in a savoury dish as well. the legament and fruit if it's unripe except for the seeds we boil it and make it a coconut salad.with a little bit chilli fresh coconut milk onion (I don't have onion anymore) garlic and ginger..soooo yummy. Jackfruit is so versatile. From dessert to savoury to snacks. Well done June

The meat substitute is with green papaya (unripe). You should try using next time and compare the difference.

You can make chips out of the tendrils by drying and then frying them. Taste amazing

Although I'm allergic to jack fruit, I've read up that it's not a good substitute for meat nutrition wise since it basically has no protein. The only reason it's a good vegan sub for pulled meats is its texture and flavorless profile, which lets it take on whatever flavor you want to put in it.

Jackfruit is available canned in my grocery stores. I like to lay out the fruit and stringy bits on a tray and broil until there are little crispy bits. Then I sauce it like pulled pork and I find it mimics the meat texture better.

Ripe jackfruit is amazing as is. Smash the seeds, coat them in spicy batter and pan-fry them. It tastes amazing!

My grandfather has a jackfruit tree and I e grown up eating jackfruit. I like eating it but I hate how it stinks up the entire fridge! Also jackfruit seeds taste awesome roasted on an open fire. Also they taste lovely with Vaal/birda (beans). Perfect lunch!

Hi there, I really love your videos!! ALL of them and I look forward to viewing the new videos. The jackfruit that you used here is a ripped one. And as far as I know, the ripe jackfruit's more edible parts are the yellow fruit and the seed. The seed has a white covering that has to be removed since that causes a little trouble to the stomach. The seeds are first washed to remove the slimy texture, air-dried, and used as in stews, curies, or roasted and panfried with little pepper red chilly (actually any flavor you want to use) . The "pulled pork" jackfruit is most suitable for the RAW JACKFRUIT. we usually discard the other flesh after removing the fruit and the seeds mostly because of the texture that you got after cooking them.

the seed are edible.... but you have to boil them and peel it... its like eating boiled sweet potato except less sweeter... it is best paired with hot coffee or chocolate...

You can pressure cook the fibrous part. Also if you marinate it overnite it soaks up flavors nicely.

Usually we use the core from....unripe(?) jackfruit...under ripe? And make kind of a stew with it. And for the seed, you can use it as flour to make brownies

In my country we use jackfruit both savory and sweet dishes ♥️ if it's unripe you can cook it with coconut milk.. you can also boil the seeds and when it's tender you can eat it already...

You should definitely try cooking savory recipes with unripe jackfruit. Also, canned jackfruit (as crazy as it is) works amazing for vegetarian/vegan recipes!! Pleaaaassseee do a jackfruit series!!

Pulled pork style jackfruit is usually made with the arils of immature green jackfruit, best if baked after cooking in a pan on the stove with your sauce. You have ripe jackfruit, which is usually eaten as a fruit. Juicy Fruit gum was made to try to replicate its flavor.

I found if you simmer the fibrous jackfruit strands in a sauce for like, 40-45 minutes, adding water if it starts drying out, they're super duper tender.

We love to cook unripe jackfruit as meat substitute. It has amazing "meaty" texture and will perfectly absorb every spice you add. The seed is also delicious. I recomend boil it and then roast or fry it.

My mum use the tendril and the core to make tamarind soup with chokoes. Also, put it in curry. The longer it stewed in the soup / curry, the more tender and enjoyable it is.

slow cook jackfruit how you would with brisket, the fibers just fall apart, the core tastes like the fatty part of the beef, the seeds get the mouthfeel of chestnuts. You could also toss with some spices and fry / air fry it in thinner pie slice like cuts. Makes for an excellent and filling snack Also ripe(yellowis) jackfruit is a laxative so consume with moderation. You ideally want to find more white (less ripe, less sweet) section.

_Marie's Country Life,_ also on RU-vid, says you can use all of the jackfruit "except the spiky part" on the outside. There are many recipes for green/unripe jackfruit that she suggests can be made with the rind and stringy "rags" of ripe jackfruit. Marie is from the Philippines, but a Sri Lankan channel, that I watch faithfully, stews unripe fruit pods and peeled seeds with grated coconut and then makes a curry from the mixture. If you're interested, search "Village Life jackfruit" on RU-vid.

Coming from India we love cooking with jackfruit. The seeds are totally delicious and make a great snack! We eat ripe jackfruit as is like a fruit, and cook with unripe ones. The one you had looks quite yellow...as in ripe. You did a great job with the tendrils though!
