for a 9" pie dish
crust
210gr all purpose flour
20gr granulated sugar
a pinch of salt
130gr cold butter or cold shortening
50gr cold water
Resting time: min 30 min to 24 hours
filling
400gr pumpkin purée, or 15oz can pumpkin purée
2 free-range whole eggs + a yolk
120gr granulated sugar
1 tbs (15gr) cornstarch
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves, optional
a pinch of salt
1 tsp vanilla extract
1 cup (250ml) heavy cream
for the egg wash
1 free-range egg + 1tbs milk for
whipped cream and ground cinnamon for serving, optional
Bake at 325°F | 50~55 minutes
