I think there is a definite time limit for the segment which is why Seth and Stephen are sometimes pushing their guests a bit.

As opposed to the normal interview on the couch, there's a lot more movement involved in the cooking segments. Because Seth has to ask his guests about their projects while also letting them explain the instructions in making the dish, they have to be quick. That's why, despite having roughly the same length as the second guest interview, cooking segments feel faster.
