Fantastic way of drying whole meals to have on the go. 2 or 3 of these are enough nutrition for the whole day, depending on the person and activity level. And more importantly, that taste amazing!
Here I used ribeye steaks, but you can use anything as long as you cut against the grain, and then dried then in our for dehydrator at the regular settings.
We brought these with us on the plane to Costa Rica, which was 3 flights and 40 hours long! we didn't need any of the airplane food, or airport food. perfect nutrition for days in a light, easy to carry form. Try it out and let me know what you think in the comments below!

The secret is to then dip them in rendered tallow. It gives you more fat and it’s absolutely delicious. It actually keeps a lot longer to if you vacuum seal it. Potentially for decades

Nice! So after you cook them you dip them in tallow? I could see that working. The native Americans used to make sacks of pemmican and plug the top with tallow as well.

@@anthonychaffeemd I did hear once that people in the old days used to cook beef with a lot of fat and store it for emergency food that would last years. Not sure what the process is. A saw video of it once but not sure if it was RU-vid. Seems to make sense. If you have pure fat cutting off oxygen from coming in contact with the food and you further can vacuum seal it.

Meat slicer is definitely the way to go if you have one! We just don't have a slicer at the moment, but definitely looking to get one

I find slicers to only work if it’s still slightly frozen. That way when you get to the end of chunk you don’t get a tail effect going on where there’s fat and grey skin it don’t cut properly. Knife is the best if ok with bigger chunks also less to clean.

I've got a couple of very cheap sharpening stones from AliExpress. Nothing special really. But every time a knife comes out of the dishwasher. The stone (800) passes about three times on each side. I don't have a single dull knife. All dirty cheap knifes and they all cut like champs! ;-)

Yeah I agree with Stacy, those are great dried meats as well. Any dried meat is fine though, and you can look into how to make pemmican. And of course there are the carnivore bars which are pecan and have a great fat to meat ratio, 80% to 20% fat protein from calories.

Dr chaffee I'm glad you mentioned hiking and camping I'm carnivore and I've been experimenting with carrying jerky beef tallow and powdered whole eggs. It works well because the grass fed beef tallow is shelf stable. Carnivore is perfectly doable for hiking!

I like them thinner, I get my butcher to slice them jerky thin every time inside round or outside round is on sale. The fat is what can turn rancid, so I eat the jerky with butter. Been making it for years. Since they don't last in my house I'm going to try the ribeye but my usual jerky thin. (less than 1/4")

I’m always looking for carnivore travel snack ideas. I always wanted a dehydrator for fruit never got around to it, but I can still get one for meats I really do appreciate all the information that you share. I am new in the game (life) as a carnivore. I ditch coffee, started back at the gym. I’ve tried every diet, I had to research for a better game plan . I am so high off of excitement for knowing that I can live pain free again. I have always read that you have to trim off all the fat and precook the meat for it to be shelf stable and safe after dehydrating. The guidance is that fat doesn’t dry out well and will go rancid within a few days, and that not bringing the meat to a high enough temperature to kill off bacteria will allow things like e. coli and salmonella to survive and grow on the meat. Can you tell us a bit more about why you think this method is safe?

Biltong has fat and I've never had an issue, eaten both in the US and South Africa and biltong is simply air dried.

There are many such dried meats like biltong etc that never use any heat whatsoever. Drying it out protects it and preserves it very well. Also remember that pennekin is 80% calories from fat, and that was used for millennia by many different people's all over the world. In fact they put tallow seals at the top of the jars of pemmican, or leather sacks of pecan, to seal them away and store them. Like that, they lasted decades without issues. And if you're keeping it in a cool, dry place then most dried meats will last a very long time.

@@anthonychaffeemd pemmican and seals are made from rendered fat though. Rendered fat is obviously shelf stable, I have a tub of lard in my cabinet for cooking with. Raw dried fat doesn’t seem like it would behave the same. The consistency is completely different and I’d be concerned if you could actually get all the moisture out of the raw fat.

@@Ph0enixW0lf You are right, even at a higher temp in my dehydrator with thin sliced beef, the fat tasted good on the first day, but after a short time it's starts to taste fishy and oxidized, so doubt it's shelf stable

I recommend ribeye sliced for philly sandwiches from costco. The butchers there get it paper thin at no extra charge!

70 degrees Celsius is 158 degrees fahrenheit. 1 centimeter is 0.394 of an inch... Basically almost but not quite a half inch thick...or a little more than 1/4

@@anthonychaffeemd you should do a video of dehydrated meat vs well done vs medium rear in terms of healthy and muscle building. I know there's gotta be one way that is optimum cuz I feel different depending. But by the time I notice what I did different it's too late. Plus too many variables have changed either in my exercises or sleep or the time when I wasable to ear. Or whether I eat ground meat or a steak. Or something else.

Some people say it's healthier to cook it less and others say that your body can get more nutrients out if it's cooked. Wth? Cn they make up their minds? Don't know weather to eat it raw or cooked. I'm betting the best is raw and not rear or well cooked. Please answer this question Dr. Chaffee

They have automatic settings, so I just used the lowest heat for longer period of time, say 18 to 24 hours. That dries it out without cooking it.

Is the dehydrator set at 70 degrees Celsius and time 10 hrs for slices around that thickness? Just trying to get a baseline time/temp and adjust from there. Thanks.

Yeah for that dehydrated there are two settings, 70° c for 10 hours or 45° c for 24 hours. We started out with the first setting, but then switched over to the second because we wanted to dry them out as opposed to cooking them. Unfortunately we only had footage of the 70° for 10 hours settings, but I think the lower heat setting is preferable. But try them both and see what you think!

The lower the temperature, the more natural enzymes will stay active. Enzymes start being destroyed from 105F.

A travel back and forth from Louisiana to Portland often. I Cube Ribeyes before I put them in the air fryer and cook them to about medium. This has been fantastic travel food for me!

It is very healthy yes, I don't think it would be any more or less healthy than air frying or regular frying with animal fats though. It's just a way of dehydrating a steak and eating it on the go in a non-perishable state.

I use Morton's curing salt, 200 degrees for 1 hr., and then 170 degrees with the oven door cracked open just slightly. Dried forces you to thoroughly pulverize and macerate the meat with saliva, making digestion as complete as possible. The jaw workout is good for your skull and teeth and it will square up your face, too.

I'm gonna do this, I'm just concerned about the fat going bad because I've heard that's a concern. I was told to use lean meat only. But this looks 1000x better. Can anyone address this concern for me? Is it bogus? How long would these snacks last?

Dip them overnight in a mixture of brown vinegar and Worcester sauce.. Make a salt and corriander rub and then dehydrate.. You will thank me

So I have never done this . can you do this in the convection oven? And is this basically like beef jerky? Are they safe to carry around for hours on? Or are you a few days not refrigerated? Just one of those things I need to be extra sure about. Thank you for this video.

I cook hamburger in pingpong ball size in an air fryer salt and let cool. Pack in a Ziploc bag for flight, also hard boiled eggs are great to bring.

its called Biltong in South Africa the only difference is that the soak it in white vinegar for 2 days and then spice it with pepper or bbq spice...and we are called barbaric for eating raw meat... cut it with the grain its even better.. greatings from your friend in South Africa 😂
